Mash pH 5.4
After mash, boil for 15 mins only with Magnum hop addition
Chill to 35degC, adj pH to 4.5 using Lactic Acid
CO2 purge and pitch Kefir
Purge with CO2 and cover with cling film and leave to sour (hold @35C for 48hrs (+/-12hrs until pH3.4 achieved)
Bring to 80degC, uncover and then boil for 70 mins
Ferment with US05 at 18C
Chill the wort to 21C˚, aerate the with pure oxygen or filtered air and pitch the yeast. Ferment at 21c
add Mango puree at around 1.025
Target pH = 3.4
CO2 level 2.8 vols.

Notes: So this one is a bit different. There is no true boil here, and I'm substituting juniper berries for juniper branches. While there are lots of juniper bushes/trees in the PNW, I don't want to grab the wrong one and poison myself.
Being a Sahti, there are no hop additions. The beer is also drank right after fermentation. I didnt put in a yeast because this recipe calls for BAKERS YEAST - I will be using Fleischman's Bread Yeast. You could also use Kveik Yeast
Mash is started low and increased in 3 stages.
1. 140 degrees for 45 minutes
Add 1/4lb juniper berries
2. 158 degrees for 45 minutes
add 1/4lb juniper berries
3. 178 degrees for 15 minutes. (This will pasteurize)
add 1/2lb juniper berries and 3 sprigs of rosemary |

Notes: Note: This recipe is for a 6 gallon batch, with 5 gallons intended to remain after hop loss.
Mash grains at 151-152°F (66-67°C) for an hour or until starch conversion is complete. Mash out at 170°F (77°C) and sparge. Collect 8 gallons (30 L) of runoff, stir in dextrose and bring to a boil.
Add hops as indicated in the recipe.
After a 90 minute boil, chill wort to 67°F (19°C) and transfer to a fermenter. Pitch two packages of yeast or a yeast starter and aerate well.
Ferment at 67°F (19°C) until fermentation activity subsides, then rack to secondary.
Add first set of dry hops on top of the racked beer and age 7-9 days, then add the second set. Age five more days then bottle or keg. |
