Notes: Mash for 90 mins at 148 F
Chill to 100 F.
Pre-acidify to pH 4.5 before adding Lactobacillus (Goodbelly)
Hold temp of 100 F. Seal kettle lid shut. Purge head space with CO2.
Acidify for 24-48 hrs until Target pH of 3.3 is reached.
Boil for 20 mins.
Add 1/2 of the raspberry puree to the boil at 5 min.
Add hops, yeast nutrient, Whirlfloc.
Chill to 75 F, pitch yeast. Double pitch due to low pH.
Ferment for 5-14 days until FG is reached.
Add remainder of raspberry puree 2 days before end of fermentation.
Serving pressure at 35F is 20 psi to maintain proper carbonation. |

Notes: You can use the same malt bill for an English bitter or a Belgian pale ale. For the bitter or Belgian ale, use 0.5 ox EKG at second dry hop. Use Wyeast 1388 ?Belgian yeast or White Labs WLP007 for English ale.
Mash at 152°F (67°C) for 45 minutes, then raise to 168°F (76°C). Boil for 75 minutes, adding hops according to the schedule. After the boil, chill the wort to 66°F (19°C), split evenly into three fermentors, and pitch a different yeast into each portion. Aerate well. Ferment at 66–68°F (19–20°C) for 5 days, then add the first dry hop to the American pale ale. Ferment for 5 more days, or until fermentation is complete, then add the second dry hops. After a few more days or once gravity is stable, remove the hops or rack, crash, package, and carbonate to about 2.5 volumes (American), 3 volumes (Belgian), and 2 volumes (British). |

I wish I could say this recipe came together in an hour, but it really is taking weeks to get from list of ingredients to conditioned pale ale. The latest revision is to add dry hopping for the last three days in the secondary. I buy hop pellets in 4 oz. envelopes, so it is tempting to use lots of hops, at least when brewing a SMaSH recipe. I'm hoping the dry hopping will help anchor the moderate bitterness to a healthy aroma of raisin and fruits. A balanced pale ale celebrating hop bitterness and aroma? Who'd have thunk that was even a thing?
Seriously, I feel this recipe was inspired by my visits to the Three Floyds Brewery in Munster, IN. Their various IPAs and Pale Ales are all testaments to having a clear vision along with good ingredients and a thorough brewing process. My hope is that this beer, in its 2020 incarnation or some other, could be served in the same room as a Three Floyds IPA.

Mash grains for 45 minutes at 160 F. Add to brew pot and add DME. Bring to boil and add Columbus hops. Boil 30 minutes. Add LME and 0.75 oz Ahtanum hops. Boil 15 minutes add Irish Moss. Boil 15 minutes, remove from heat and add 1.25 oz Ahtanum hops. Stir and move to ice water bath to cool.

Excellent beer. Nice head with retention. Rich flavor & hops profile. Mom's favorite homebrew. |
