FERMENTATION SCHEDULE
7-10 days at 18 deg c. Then raise at 1 deg c per day until you reach 21 deg c.
You must ensure that you have a consistent FG for 3 days before your beer can be deemed finished.
For the best results give your beer some extra days in the fermentation vessel so that the yeast can clean up after itself.

Notes: Wanted to try 7.5 oz of chocolate Rye instead of carafa l 300L. (above does not have a listing for 300L carafa). Original recipe 7.5 chocolate rye. 9.5 oz crystal 40. 9.5 oz crystal 120
For water 12.1 lbs grain x .3 = 3.63 gal and x .75 = 2.72 for sparge = 6.08 total for water. This makes preboil amount about 4.5gal. I added water during boil through grains about 2 gallons checking gravity. Post boil 5.5 gal with OG 1.060.
I added 5ml lactic acid during mash Ph was 5.18 |

Notes: historical Scottish XX Mild - what could be better on a cold winter's night? I wish I had styles that matched up better, but modern style guides are out of touch with 19th century practices. still, this was brewed and served as Scottish Mild.
