Notes: This was brewed on a Tuesday for a party that Saturday. Hops were originally put in a suspended BrewBag during the whirlpool, squeezed dry, then transferred to a fine mesh bag and put in the fermenter at racking. It hit the fermenter at about 6pm, was then kegged and QuickCarbed Saturday morning, and served about 2 hours later. While it was a tad hazy that day, the left-overs dropped 'gem' clear by the end of the next week. The Crystal could maybe have been traded for more RedX, or just Munich. While it was a tad sweet on the front, the finish was still properly dry due to the water profile, and the sweetness might have accentuated the fruity hops and yeast esters. (guava & apricot) |

While I don't question Charlie's use of Pilsner as a base, I really detest that malt. So I'll likely use American Pale Ale, or Golden Promise instead.
Unfortunately, his recipe in that link is not precise on the yeast strain. (or even if it is an Ale or Lager) The style can be made with either. My guess based on the fermentation temp is he brews this as a lager but could be a cold fermented ale. But his FistBump yeast seems to be a hybrid, so it might not matter. (a.k.a. WLP862 CryHavoc)
The calc shows the color way lighter (like an amber or brown) than a porter.
Hallertau can be subbed with Tettnang or Spalt. Bullion can be subbed for the Cluster. (the point is to use a very low aa% home grown or heirloom hop)
I'll brew this as-is (even with Pilsner) one time, but then likely start adjusting to hit style and to my taste buds.

24L mash with:
6ml 60% lactic acid
3.5g gypsum
5g epsom salt
5g calcium chloride

Top up kettle with reserved 9L water & boil = 30L boil
15 minute boil with whirflock & chiller
Chill to 70c & add steep hops, steep for 20 minutes, chill to 32c
transfer to 'Saurus
Connect 'Saurus to sanitised keg, and attach spunding set to 10 PSI
200g dry hop into SV during active ferment. Fermenting C02 purge SV for 24hrs. Remove spunding from SV and attach to Saurus. Transfer SV to fridge until racking.
Rack from Saurus to SV when FG, soft crash to 15c in fridge. 24hr dry hop at 15c, Crash to 2c thereafter.
