bumping up base malt and turning down predicted efficiency. just got less than 60 on an NEIPA yesterday. i think it might be the oats not contributing much? if we estimate no diastatic points from the oats this should come in at 1089 and 9.1% but hopefully we'll get closer to 10.

this recipe formulated based on the guidelines of weathered souls. link below. homebrew recipe had more ingredients so i drafted this one based off of the commercial recommendations. recipe drafted for 4 gallons to try to hit a decent efficiency this time.
mash at 154.
remember to sparge slow af and get the wort boiling during sparge anyway because the prolonged boil will help the OG and body.
considering using hothead yeast, or possible london.
might consider adding a couple vanilla beans.

Notes: After Mash bring to boil for 10 minutes. Check PH and add Lactic Acid until PH reads 4.5. Cool to 100° then pitch to container of Lactobacillus brevis. Cover with cling wrap at liquid line in kettle. Keep at 90°-100° for 24 to 48 hours until PH reads 3.5 or lower (depending on preference). Once wort has reached desired sourness proceed to the 60 minute boil with normal hop schedule.
After boil, rack to two different 5 gallon carboys. Pitch 1200 ml of yeast starter in each. After 7 days rack one car boy to secondary and add desired fruit.
Sat 4 days at 97-99 degrees and ended with a PH of 3.4
Pre-Boil - 1.041
Update. I bottle conditioned 12 beers just after fermentation, then with half the remaining beer added 2 cucumbers 1 small water melon and half a cantaloupe. The remaining half had an addition of 6 lbs of mixed berries (blueberry, blackberry & raspberry)

Challenger hops for 60 minutes, Styrian Golding in the last 10.
Cool wort to 170, then add your first half of the bananas, whirlpool for 10 minutes.
Filter the banana as best you can before cooling and transferring to fermenter.
Filtering is not necessary, but without doing so, the wort will be THICC.
After primary fermentation completes, add the molasses and second half of bananas - inside muslin bag worked well for me.
Allow secondary fermentation to complete and rack to secondary to cold crash if possible before bottling or kegging.
