Notes: Possible substitutions: Vanilla extract for vanilla bean, coconut extract (NOT flavoring) for coconut. These may be added at bottling.
Cocunut Extract Ingredients
shredded coconut (fresh or dried) (I used ¾ - 1 cup)
¾ cup Rum or other distilled alcohol (enough to cover the coconut)
Instructions
Place the shredded coconut in a jar or other airtight container.
Pour enough rum over the coconut to cover it. I ended up using about equal parts.
Place in a cool, dark area and let sit for several days to 2 weeks, giving your jar a good shake about once a day.
Once your extract has reached your desired level of coconutty-ness, drain the extract from the shredded coconut and store it in an airtight jar in the fridge. |

bake @ 350 for 45 minutes.
separate skin, mash, and coat with honey.
bake @ 350 for another 45 minutes.
let cool to mash temp and add to mash.
.5 tsp ground ginger
2cinnamon sticks
.25 tsp whole cloves
.25 tsp nutmeg
.25 tsp allspice
add above "spice pouch" to final 5 minutes of boil.
4 oz vanilla bean vodka solution (2 beans, brooklyn vodka)
1 tsp pumpkin pie spice
1.5 tsp graham cracker extract
add above to to secondary (2 weeks).
Placed 2nd in Seasonal Spiced beer at the AWOG 2020 home brewers contest. |

Lumberjack Stout is an intense beast that took its inspriation from what an actual bona-fide lumberjack might have for breakfast. Flavours of molasses, chocolate, smoke, berry, coffee and more, with a low bitterness, leaning this beer firmly towards the malty side. Adding extra smoked malt will amp up the bacon character.

Notes: 7 ml hop shot at 90 min
1 oz EKG goes in at 5 min with whirlfloc and yeast nutrient.
At FO, measure out ~1.5 lb of homemade golden syrup and 0.25 lb bourbon syrup (up depending on efficiency).
Oxygenate at time of pitching yeast (might be next day if starter needs to be cold crashed still).
BREW DAY (31-Mar-19):

Ferm schedule, start at 64F until ferm kicks in, then 66F until 50+% attenuation and ramp up to 68F until gravity is stable. Drop temp to 55F for 2 days before
Kegging.
Started cold crashing (40F with co2 balloon) on 05-apr-19.
Checked gravity on 09-Aug-19, appears to be around same reading as when kegged.
Bottled 36 twelve oz beers and one 20 oz bottle on 14-Aug-19. 1 gal aged with 0.4 oz medium char oak and 4 oz Tincup whiskey. Taste after one month.
10 bottles beer made on 29-Dec-19 (TCW). |
