| Notes: At flameout add lime zest using zester and placing in a hop spider, 3-6 key limes. Ferment at 68 - 75°F for up to two weeks as Philly Sour can take up to 14 days to convert all the sugars. Upon completion of fermentation check pH, it should be around 3.9. In the secondary add lime zest/peel soaked in vodka to taste; 6-8 key lime zest/peels to 2oz vodka (Whipped Vodka would give more vanilla flavor); shake every other day (strain before adding) Duplicate with two fresh Mexican vanilla beans; scrape inside and soak. Crash the beer to 35°F (2°C) Then bottle or keg and carbonate to approximately 2.4 volumes of CO2. |

Notes: Mill grains and mash in at room temperature—about 68°F (20°C).
Steadily raise mash to 151°F (66°C), and rest there 10 minutes.
Raise to 162°F (72°C); rest 20 minutes.
Raise to 170°F (77°C), rest 10 minutes, and mash out.
Vorlauf until runnings are clear, then run off into the kettle.
Sparge and top up as necessary to get 6.5 gallons (24.6 liters) of wort—or more, depending on your evaporation rate.
Boil for 90 minutes, following the hops schedule.
After the boil, chill to 52°F (11°C), aerate wort, and pitch yeast. Ferment at 55°F (13°C) for about 1 week.
After fermentation is complete, crash, add dry hops, and lager at 36°F (2°C) for about 4 weeks.
BREWER’S NOTES
No filtration, no centrifuge, no finings—just cold and time. Spunding is recommended for more natural carbonation. (For more about spunding, see “Gearhead: The Force Behind the Fizz” on beerandbrewing.com.) Serve at 46–50°F (8–10°C) in a tapered pilsner glass. |

♦ STANDARD BREWING NOTES:
Create 8 gallons sparge water. Bring to 154° strike temperature
Prime pump. Push water through a hose.
Add grain – Sparge at 152° for ___ minutes (Minimum 60)
(One-gallon loss during sparge process)
Water burn rate: 1 gallon per hour.
Drain GRAIN from the kettle. Adjust water height of ___ (7 gallons)
Boil clean water for end of boil session adjustment
Mash Option dark beers – Add x tablespoon Calcium Carbonate
60 minutes – Add tablespoon 5.2 pH balancer
60 minutes – Add 2 drops Fermcap

| Notes: Note Belgian Candi Sugar is home made amber. Around Mid color. Chinook hops are homegrown, IBU unknown. Actually added entire Chinook Hop Bine to the brew. Final IBU will be around 80 to 90. Adjust when boiling to really make hoppy. Two batches to be aged in 10 gallon Rum Barrel x 4-6 months. Not going for an aromatic hoppy ale. Want flavors to meld with the barrel flavors. Follows a Tripel that has been in the Barrel 6 months. |

Notes: I have the liquid extract can size set at 3.3lb's, because that's the only number I could find on the net. I guess it's correct.
This recipe does equal the actual abv according to the hydrometer reading.
OG: 1.154
(post wort [aka post yeast-pitch] day-#2 in carboy: 1.024)
FG: 1.014
Supposedly, that should equal 18.3% abv., but this recipe calculator suggests 3.9%. I'm not convinced it's 18%, but it's sure not 3.9% either! Perhaps it is stronger than I think, b/c I usually have a bit of a head-pounding afterward.
