Notes: An early ( for me) example of trying to create a complex cellaring beer, using a Sasion style was obviously not the way to go.
I have sampled this after 6 years sitting in my safe room {beer wise} 12 large bottles found and a possible extra 5litre demijon
There is a medium dry tone to this with good levels of complex light fruit flavour and no undue off flavours like wet cardboard or horse blanket etc.
Sour is mild and pleasant and carbonation is quite low and produces no head. I suspect there was not much for the Brett to work on so little effect.
I think the extended family will be required to consume the remainder this Easter.
6 years of cellaring is a bit long for this , I would hope to be able to get a beer like this with a couple of months in the cellar or less. |

1. How is the body? Does it need oats/wheat? (Perhaps 10% each for the grain bill)? Does it have a thin mouthfeel?
2. Is the perceived sweetness good? (Less or no honey malt or corn sugar instead of turbinado? Perhaps mash at 149-150 versus 152-154?)
3. Is it dry hopped enough? Push the late hop additions even more?
4. How is the tropical flavor versus tropical nose?
*My El Dorado package had 8.4 oz versus 8 oz, so I dry hopped with a total of 2.4 oz El Dorado versus 2 oz in the recipe. |

Notes: Extra Dark/Robust (formerly Grade B) Vermont Maple Syrup
Added maple syrup and candi sugar to wort post flameout, once temperature dipped below 180'F.
Combined and rehydrated both packets together (20 mins at 85-95'F), then directly pitched to 5.5 gal wort, OG 1.079, at 63'F, free rise to 77'F over 2.5 - 3 days, then slowly dropped to 72'F. Kegged in day 12 (would have done it sooner day 10), SG 1.010.
