| Notes: Add grains and 5.2 ph stabilizer to 4.44 gallons of 163 degree water. Temperature should stabilize at 150 degrees. Hold for 60 minutes. Add heat and raise temperature to 168 degrees for mash out. Sparge with 170 degree water to collect 7.5 gallons of wort and bring to a boil. Boil for 60 minutes and follow hop and ingredient schedule. Cool to 68 degrees and add to fermenter. Adjust volume to 6.25 gallons if necessary and pitch yeast. Primary ferment for 2 weeks then transfer to secondary. After 3 days, add dry hops. After 4 more days, bottle or keg. |

Notes: Mash the grains at 152°F (67°C) for 60 minutes. Vorlauf until the runnings are clear, then run off into the kettle. Sparge the grains and top up as necessary to obtain 6 gallons (23 liters) of wort. Boil 60 minutes, following the hops schedule.
After the boil, chill the wort to slightly below fermentation temperature, about 60°F (16°C). Aerate the wort with pure oxygen or filtered air and pitch the yeast. Ferment at 60°F (16°C) for 4 days, then let the temperature rise to 68°F (20°C) and hold for an additional 7 days. Allow the beer to free rise from there until 2 days after airlock activity ceases, then crash the beer to 35°F (2°C), bottle or keg, and carbonate to about 2 volumes of CO2. |

Notes: 1 Light Toast French Oak spiral tossed in once krausen develops and high count of healthy yeast cells takes over ferment.
This beer is open fermented for as long as the krausen remains healthy and robust at the top of the beer, leaving the top off the wide mouth fermenter once the krausen really develops and leaving it that way until it shows signs of thinning.
Ferulic acid rest at 113 degrees Fahrenheit (45C). At this temperature, ferulic acid is released from arabinoxylane. The POF+ yeast strains we discussed in the yeast section can convert ferulic acid into 4-vinyl guaiacol (4VG). At the correct concentrations, 4VG produces the spicy clove flavors we are looking for. This rest typically lasts between 10 – 25 minutes, with the concentration of 4VG increasing with time. While the clove flavor will increase with a longer ferulic acid rest, the banana esters’ prominence will decrease, so it is important to find the balance that is right for you.
