Notes: Add 10ml Lactic acid and 15mg of Calcium Chloride to mash water.
Mash in base malt and oats at 150F.
Steep Midnight wheat and blackprinz malt in cold water for duration of mash.
At 60 minutes of mash time, add steeped midnight wheat and blackprinz malts.
Hop stand Mosaic at 165 for 20 minutes.
Pull sample for fast ferment test.
Day 3: Add Kohatu
Day 6: Drop temp to 50F
Day 7: Dry hop Galaxy and Bru-1.
Day 8: Pull hops off beer.
Day 10: Take gravity reading. If at FG, Cold Crash. |

Notes: The late addition 4 oz of DME (I had wheat on hand - use whatever) is added to 2 qts water in separate pot during the mash, and boiled down to one pint or cup even (reduce by 75%, or more even, to create “kettle caramelization” Maillard reaction flavors), then added into main boil toward the end.
Use yeast slurry from previous batch (mine from Best Bitter I’m kegging same day), or build big enough starter for big beer. Oxygenate adequately. Start fermentation at 64° for about three to four days, then raise to 66° for two, 68° for two, and then 70° to finish off... |

Notes: To commemorate Todd's visit to North Adams, we sampled Heady Topper, Focal Banger, and Pliny the Elder. We opted to try to replicate the Pliny recipe. WE actually used Pale Ale DME which is 6 L but is not in the selection dropdown. We also used a double packet of Safale 05. The yeast was rocking after less than 24 hours. The OG was around 1.084, much higher than above. I have a feeling that the IBU's are higher too. The process was pretty much standard - we boiled 3 gal, added almost 3 gal of near frozen water to get to the 5.5 marker. Got to chill the wort in the snow due to the recent storm that brought 10".
Tasted after 2 weeks in bottle and fiery and clean with a different bitterness than I am used to. Definitely taste the high ABV as even the high IBU's don't mask it. But still balanced and quality. Wish I had a Pliny for direct comparison. |

Notes: DIPA version of furnado, a late hopped pale ale. Using dry yeast for this one as I have 3 packs of (expired) US05. Should still be fine though as it has been refrigerated the whole time.
