Notes: All Zythos-hopped sour NEIPA Saison, co-pitched with Goodbelly shots (or other Lacto). If you don’t want to use saison, then use your favorite usual sacc strain for NEIPAs (London III, etc), or use WLP 644 sacc trois. 20 IBU may be too much for the lacto, but I’m only going for a mild tartness here, not enamel-melting. Lower pH of wort to 4.5 with Lactic acid prior to pitching, to help pre-sour and with foam retention.
First dry hop is added immediately after active fermentation starts (day 1-2) for biotransformation, then removed as krausen dies down (day 4-5). Add Brett strain(s) and let condition warm for a few months. Then second dry hop added before packaging, and removed 3-5 days later. Then rack into keg (add more keg dry hops if you feel it needs it), carbonate, and serve! |

Notes: Trying to make a quick sour pale ale with peach coming from the new yeast and the hops rather than actual peach, with Ballistic Tang as a bit of a starting point.

Lots of lemon for me, almost Lemon Drop flavoured, light and very refreshing. This is pretty well liked by almost everyone and well worth making again. Tightly bubbled head that fades fast, pale straw and clean looking.

Primary ferment with your favorite Saison yeast (start in mid-60s for a couple days, then let free rise into the high 70s; only use foil over carboy opening to avoid “Saison stall”) in a 5 gallon carboy. They blend in 15% oak-aged sour beer, before the dry hop, so you could try that to get more authentic. But I’m just going to transfer to secondary (3.0 gallons) and add JK bottle dregs to finish fermenting bone dry and tart (the IBU level should keep it from getting too sour, hopefully). Dry hop right before packaging. They use Simcoe, but I think Denali or Azacca would be nice here...
As an experiment, could split batch and ferment one as stated above (staggered: sacc first, then dregs second), and the other copitched with sacc and dregs at the same time. |
