Notes: the addition of the zest of the Tahiti lemon is at the end of the boil
fermented at a temperature of 20º celcius for 7 days, then lowers the temperature to 0º celcius for 3 days, immediately after filling (priming in the bottle) 6 grams per liter. the result is a beer with a light body, citrus and refreshing aroma.

Notes: Fermented at 61 for 7 days. Ramped 3 degrees/day for 4 days.
Used 87% Brew House efficiency. This was too high. Used about 37lbs of grain but added about 5 gallons extra of water. It adjusted up some but still came up about 15% short of predicted OG. Changed target to brew pot after boil and set to 86% ending kettle efficiency. This bumped the grain bill up by about 15%. I believe this increase will put us closer to target next brew. |
