| Notes: Hoppy, bitter, and moderately strong like an American IPA, but with some caramel, toffee, and/or dark fruit malt character. Retaining the dryish finish and lean body that makes IPAs so drinkable, a Red IPA is a little more flavorful and malty than an American IPA without being sweet or heavy. |

| Notes: mash with 5gal strike water at 168F to get 156F mash temp for 45 minutes. Sparge to get 7Gal in kettle. Boil 60 minutes then whirlpool at 175F. Then chill to 66F with 5.25Gal wort left. aerate and pitch yeast, ferment at 68F for 7 days then chill to 60F and wait 7 days. Cold crash at 35F for 48 hours and package. |

Notes: Note, hops and other ingredients added at minutes into 60 minute boil.
In other words, the first hop addition, Amarillo, is added at 5 minutes in, it will be in the boil for 55 minutes.
Nutmeg and Cinnamon are added at 55 minutes in, they will be in the boil for 5 minutes. I put both the cinnamon stick, ( one 2 inch stick ) and the Nutmeg, ( twin nuts ) into a muslin bag. Then struck it softly with a hammer to slightly break up the nuts and cinnamon before dropping the bag into the boil. |
