Notes: Trying Wyeast 1728 (Scottish Ale) -- it should hold up to the alcohol content and ferment relatively clean. Will start it out on the lower side and then ramp up the temperature. 2-3 weeks in primary.
Will rack to glass carboy with maple syrup, bourbon soaked French Oak cubes, bourbon soaked cacao nibs, and cold-brewed coffee (see below). Planning to hold here for ~8 weeks, then transfer to keg and carbonate/condition for 9-10 months.
Coffee: using Mackinac Fudge coffee. Add 2 oz ground beans at flameout and steep briefly. Add 2 oz cold-brewed for secondary.
Maple syrup is added at secondary. |

Notes: Add plain white table sugar with 10 minutes left to go in the boil. This boiling time will allow sucrose to break down to glucose/fructose making it similar to clear candi sugar.
Bottle condition. Age for at least 6 months for best results.
I used the odd amount of tettnanger because I have it in bulk. I bought 2 oz of Saaz for this brew so I used the full 2 oz.
Used Escarpment West Abbey Ale yeast. |

NARRATIVE: 90 minute boil. Chill to 62F. O2 for 60 seconds. Ramp primary starting at 62F then raise to 68 over 7 days
until reaching 1.010. Dump yeast or rack off primary to secondary. Rack at 50F for 1 week until reaching FG (1.008 –
1.009). Crash to 35F for 1 week. Bottle with pre-boiled Simplicity Candi Syrup at a rate of 34 grams/gallon (then hold
bottles at 72F for 10 days for initial carbonation). Bottle condition at cellar temps, (60F), for 6-12 months.
