Notes: Shredded carrots were boiled for 10 minutes with 1 pound of 2 row to gelatinize starches prior to adding to mash.
Grated cinnamon, vanilla bean and nutmeg soaked in 6 oz. bourbon for two weeks.
Strain and add to taste at kegging. Candied ginger root added to boil with 15 minutes left. |

Notes: Bring Wort to quick boil then cool to 90F and pre acidify with lactic acid to 4.2-4.5 pH. Pitch OYL-605 and sour in kettle to 3.2-3.5 pH. Bring wort to boil for 60 minutes and add hops per recipe. Cool to 70F and pitch OYL-500 and ferment to near terminal. Add Blackberry and Raspberry Puree and ferment for additional week. Cold crash, keg and serve.

Notes: Add lemon and orange zest and juice to end of boil.
Pitch yeast at 65 F, add brett vial directly (no starter), slowly ramp up to 85 F after 72 hours.
Primary for 2 weeks at 85 F. Rack to secondary for 8 to 16 weeks. Add 0.5 oz French oak cubes after two weeks of secondary.
