Notes: For best results, juice the ginger with a macerating (slow) juicer. Bring water to a boil together with other spices, simmer for 20 minutes, then add juices and sugar and allow to cool to at least 30 degrees C.
Add cooled wort to the trub left behind from a stout ferment, e.g. The Dark Crystal.
Open ferment (ideally in a food grade bucket with lid), no airlock, just cover the top of the bung with clean foil. Choose a warmer location and/or season, e.g. kitchen, aiming for 22-24 degrees C (but up to 30), or substitute a wide temperature range yeast (e.g. Loki).
Bottle reusing 8 empty 2L carbonated beverage bottles (no root beer bottles unless completely eradicating the persistent flavour extant in them).
Colour (and dark rum-like flavour) in the final beverage can be tweaked by substituting table sugar for demarara, brown sugar, or even molasses, heading towards a 'dark and stormy' cocktail finish. Alternatively, the palest option can be given an oceanic tint by adding Blue Curaçao before bottling.

Of course, add your whirlfloc and yeast nutrient. (This isn't an overly thick beer, we'd want to dry this out as much as possible.)
Nice starter of White Labs WLP530 Abbey Ale, or pitch at least two vials, and aerate the crap out of it. Hit it with O2 if you have a tank/diffusion stone.
Give it about 3 weeks in primary, keeping it above 70 degrees for the yeasties to do their thing. Rack when it hits 1.012.
Here's where I get fuzzy. Vinnie says that when this comes off to secondary, he removes the yeast. I'm assuming he's doing that by pasteurization? Either way, I doubt it'd ruin the beer if it's just racked as you normally would.
You'll need a bigger carboy than 5 gallons, to accommodate the cherries, so grab yourself a 6.5 gallon one.
Into secondary, dump a package of Brett, and give it another couple of weeks.
Into secondary, dump 2.0 lb mashed cherries, as well as a package of Belgian Sour Mix 1. For a full effect, soak 1oz of oak chips in some pinot, and add those to the secondary as well. Let that chill for 2-3 months.
Rack to a keg, stash for 6 months before carbing.
Hugely labour intensive beer, and man, if I tapped that keg after a year or so and it tasted like arse, I wouldn't be a happy bunny! |

| Notes: Inspired by a clone of Founders Kentucky Bourbon Stout. Infusion Mash at 65C for 60 mins. Add Hops, chocolate, and coffee as specified. Ferment for 2 weeks at 19C. Soak 14 grams French Oak chips in 0.2 L Kentucky Bourbon for 2 days. Soak ground coffee in 0.2 L boiled, cooled water and leave overnight, covered in refrigerator. Strain out grounds and add cold coffee and bourbon, with wood chips to secondary. Rack fermented stout into this mixture and condition in secondary at 19C for 2 more weeks. |
