Notes: Belgian Imperial Stout aged on toasted coconut and cacao. The Belgian yeast strain introduces a whole new dimension to the Imperial Stout style resulting in a beer that resembles a marshmallow toasted on a smouldering barbeque then smothered in dark chocolate. Massively seductive and encapsulating this blacker than midnight beer pours with coffee brown head so thick you could almost stand on it, and with an epic lacing on your glass.

20 hours incubation @ 40C: 3.65, 40 hours: 3.43, will add 1.5ml acid at kegging
Presour grav: 1.037, OG: 1.053...refractometers don't work with soured wort maybe?
Fermentation completed in a few days, added 1kg blueberries after 1 week, let sit for a week
Kegged 8/8/21 - Good level of sour, nice dark flavor notes. Hint of blueberry comes through. All in all, a resounding success :)

Notes: roasted cacao nibs at 250F for 20 min, soaked in vodka for 5 days before brewing - add to fermenter 1 day before kegging
as per other recipes, added 8oz cocoa powder at flameout, along with lactose, and whirlpooled briefly. The cocoa powder completely clogged the kettle screen, and the BIB pump was required to drain the kettle - afterwards a lot of thick chocolate syrup was left in the kettle and this was poured into the fermenter. |

♦ SESSION NOTES: Screwed up the last ingredient of Special B at 32 ounces and should have been maybe 3 OZ. This cause the SRM to way over scale. This is going to be a dark beer. (140 - 155 L) Castle - The darkest of the Belgian crystal malts, Special B will impart a heavy caramel taste and is often credited with the raisin-like flavors of some Belgian Abbey ales. Larger percentages (greater than 5%) will contribute a dark brown-black color and fuller body.

♦ STANDARD BREWING NOTES:
Turn off water softener. Purge water faucet.
Create 7 gallons sparge water. Bring to 154° strike temperature.
Prime pump. Push water through hose.
60 minutes – Add tablespoon 5.2 pH balancer.
Add grain – Sparge at 144-152° for ___ minutes (Minimum 60)
(One-gallon loss during sparge process)
Water burn rate: 1-1/2 gallon per hour.
Drain GRAIN from kettle. Adjust water height of ___ (7 gallons)
Boil clean water for end of boil session adjustment.

I like to use hybrid yeasts to make lagers, particularly WLP029 German Ale/Kolsch, despite concerns expressed by others I would never get that “crisp lager character” using such a method. Well, I used the following recipe to make a beer that took 1st place in its division in a local BJCP comp with a score of 40 points. Not one judge mentioned anything about the beer not tasting like a traditional lager. The key is pitching a big, fresh starter and keeping fermentation cooler than White Labs recommends for the first few days.

I also have to take a hard long look on the mash schema. Mashing on a lower temp. would proved more a crisper though with less body and mouth feel. Dropping the 51°C protein rest that I think is pointless with modern malts. |

Notes: Appearance: Pale amber, hazy in the body – attributed to the lack of gelatin in the keg. I’ll use gelatin for all appropriate styles to follow.
Aroma: Deliciously hoppy, sharp and crisp. Not as much as I thought would be present. Amarillo hoppiness definitely present in the nose.
Taste: It is a little sweet, which I was afraid of, and makes me miss my style target. But after I console myself for that failiure, the beer tastes pretty goddamn good. The hop bill really went to work for me, ramping up from the middle to back palate and lingering for a bit after you swallow it down. The malt is pretty unassuming, and it attributes a good drinkability and thin mouthfeel, but let’s be honest – this beer wasn’t about the malt, it was about the hops. I freaking love hops. From Others: Smooth. A bit sweeter on the palate for the style, attributed to the higher FG. Sweet on the front, pleasantly bitter and a little earthy (Northern Brewer) on the toungue and lasting through the finish, with a little herbal taste on the finish. A quite drinkable PA! |
