Notes: Keys from conversations with co-owner & brewer John Kimmich at Alchemist:
- Dry hop at 36 degrees F
- Avoid oxygen at all costs!!
- Do not think you have to go crazy with dry hops, John hops at 4-5lbs per barrel (2-2.6oz gallon)
- Do not dry hop for more than 48-60 hours!!
- John was sheepish about stating fermentation temperatures, follow guidelines and adjust as you repeat

Notes: At start of fermentation, begin soaking 4-8oz of cacao nibs in vodka. After primary fermentation is complete, add cacao nibs and vodka to fermenter during secondary (for the remainder of fermentation).
Cold brew a coffee concentrate with a light/blonde roast. Add 6-16oz of coffee concentrate into fermenter during secondary fermentation. |

Notes: Instead of montmorency cherries listed above,Used tart cherry concentrate, only 4 ounces: came out subtle on the cherry, which was actually ok(better than a cherry bomb)....I am going to rebrew w 6 ounces of concentrate soon....
Actual FG is much lower, w resultant increase in ABV. Saison yeasts tend to be beasts, and the BF calculator may not have taken that into account. My observed FG's have been 1.003, 1.002, 1.002. |

Notes: The Mild is actually Joe White Traditional Ale, amber and roasted barley also Joe White. Weyermann Carared and Briess Torrified red wheat.
Tried this one a bit early as I was out of beer, but it is bloody beautiful. In fact I think I'll put another down this weekend.
I did make the second batch, and knocked it off just as quick. Have discovered my thermometer on the mash tun was way off, so will be making some changes next time. |
