DIRECTIONS
Mill the other grains before adding the rice hulls. Mash at 152°F (67°C) for 90 minutes. Recirculate until the runnings are clear, then run off into the kettle. Sparge and top up as necessary to get about 6 gallons (23 liters) of wort. Boil for 60 minutes, adding hops according to the schedule. After the boil, chill to about 67°F (19°C), aerate, and pitch yeast. Ferment at 67°F (19°C) for 3 days, then let the temperature rise to 72°F (22°C). When fermentation is complete, crash, package, and carbonate to about 2.5 volumes.
For spices, we’re going to add…nothing. You can if you want. We’ll be over here, with the hops.
The best thing about the hopping for this recipe is how perfectly the hop is suited to the task, which means we use one hop in two additions. Get yourself 2 ounces (57 g) of Pacific Jade, a New Zealand hop variety that features…wait for it…lemon, orange, pepper, and herbs. It even has a healthy double-digit alpha-acid percentage. You’ll add 20–25 IBUs of it in a 10-minute addition, and whatever’s left at flame-out. Done. No spice grinder, no dried peels, no flower petals, and a bright, fruity, spicy flavor and aroma. |

Notes: Times are tough in Pottersville, with the rent that old man Potter charges for his slums! Given that he owns the mill too, his prices are out of control...so what's a brewer to do?
This twist on a pale ale uses light molasses and dark molasses instead of grains. It is gluten free, if made with gluten free yeasts like Danstar.
Rather than corn syrup, light molasses or Lyle's Golden syrup can be used. The molasses in the recipe should be dark molasses, to provide color and character, and some complexity.
Boil 1 gallon of water, and add hops according to schedule.
Add 2oz molasses at flameout.
Pour the 1.25lb corn syrup (or light molasses/golden syrup, whatever you decided to use) into a new pot.
Strain hot hops/molasses water into new pot, on top of corn syrup (or light molasses/golden syrup).
Cool to 70-80 degrees.
Rack into primary until the wort just reaches the shoulder of the jug. Just be sure you do not surpass the ONE GALLON writing on the jug. I recommend a blow off tube for the first 3-4 days of fermentation, as well.
Pitch yeast and give it 2 weeks, or until fermentation stops and hydrometer readings are consistent.
Bottle with 0.9-1.0 oz of dextrose.

| Notes: Barley Grown in the backyard and malted in the sink. roasted some and toasted some and left some pale. Poor efficiency. accidentally almost boiled the mash. The centennial hops are growing of the front of the shed and were picked during the boil and dumped in at flame-out. Picked some more and dumped them in the fermentor after a couple of days, and they stayed in for 5 more days. Have not tried yet, but was a nice pale colour with very mild hop aroma at bottling. only got 10x350ml bottles. Put a few fresh hops in two of the bottles for fun. I'm expecting that it won't highlight the super fresh hops the way i was hoping for. But maybe carbonation with rouse the aromas! |
