DIRECTIONS
Mash at 154°F (68°C). Boil for 60 minutes with a good, rolling boil, following the hops and additions schedule. After the boil, chill the wort to slightly below fermentation temperature, about 60°F (16°C). Oxygenate the wort very well and pitch the yeast. Ferment between 65°F (18°C) and 75°F (24°C) for 30 days, adding cinnamon at the start and tasting every 12, 24, 36 hours until you reach the desired level of taste, remembering that the flavors will meld over time.
TIPS FOR SUCCESS
Don’t sweat the cinnamon too much. During fermentation with the cinnamon, remember it will fade over time, so it’s best to start out with both the cinnamon and licorice a bit larger in the presentation than you may want. Time is the key to this beer coming together. |

Notes: My first recipe, tried to emulate a few that I've seen online and add a little twist. Going for a beer that has a session beer appeal, with a little bite. The .2 oz 30 minute Centennial and 15 minute Columbus additions will add the bitter, while the 5 minute Citra addition, and the second Citra addition at flame out providing a citrus like forefront. |

consider when remaking this recipe if the malt profile isn't right to do a decoction mash and try using pilsner malt instead with a 90 minute boil
maybe consider playing with water chemistry if profile still isn't right with decoction
"Traditionally, the mash regimen called a triple decoction required three decoctions and four temperature rests: an acid rest at 95° F, a protein rest at 121° to 131° F, a starch conversion at 150° to 158° F, and a mash-out rest at 165° to 168° F. Today the less time-
consuming double- and single-decoction methods are more common.
The double decoction usually starts with a temperature of 128° to 131° F that is increased to 152° to 155° F and finally 165° to 168° F by two decoctions. The single decoction requires only one decoction to raise the mash temperature either from the starting point, 128° to 131° F, to a mash-out at 152° to 155° F or from 152° to 155° F to mash-out at 165° to 168° F."

Notes: Pre boil SG was 1.048. Forgot SG but due to boil off, assuming 1.064. FG was 1.009 which gives an ABV of 7.22%.
Wort tasted great. Nice caramel notes.
Fermentation finished up in 5 days. Fermented at 66 then ramped the temp up to 68 at day 10. Cold crashed at 40 for 1.5-2 days
TASTE: Great flavor and Aroma. Definite keeper. May think about adding a little bit of bittering hops to amp up the IBU a smidge. Not needed tho. Great beer |

Notes: Water volumes were a little off. I was over on pre-boil volume and under volume after chilling. Need to spend more time on fine tuning water amounts. Used a protein rest of 131 degrees for 15 minutes to help reduce chill haze that has plagued this recipe in the past. My Post boil gravity was 1.052.Exactly what I had planned for.I used FWH on this session as apposed to usual hop regimen. Normally 2 ounces of Saaz at 60 min, 2 ounces of hallertauer at 20 min. Used two packs of US-05. Rehydrated and proofed with 1 cup of wort pulled from kettle after hot break. Yeast showed nice thick head of foam and activity. Pitched after cooling wort to 68 Degrees Fahrenheit. |
