Notes: For Brewzilla 35 liter with continuous recirculation.
Water: 8 gal in kettle, add chemicals, at first strike temp (~110F) drain off 1.75 gal for later sparge. Sparge with 1.75 gal or more to get 6.75 gal pre-boil.
Cool to 64F, add 45 sec of Oxygen or 5 min of air, then slight underpitch to encourage esters at same temperature. Wyeast 3068 OR Lallemand 3614 are alternatives While Labs WLP300. Near end of fermentation, increase temperature to 72 F and hold 3 to 5 days. Keg without a cold crash.
Carbonate to 4 vols, fairly fizzy. |

Notes: This recipe is designed as an ode to my growing up in Oregon and Washington. All hop selections are based on names synonymous with the Pacific Northwest. Flavor profile is intended to be a little piny accompanied by significant citrus notes.
5.5 gal will go into a fermenter and go through dry hopping. A separate 1 gal batch will be fermented (Safale 05_ and no dry hopping will be added. Side by side comparisons to be done after conditioning is complete. |

Notes: 1. Heat 1 gal to 168.5*F with kettle. Preheat oven to 155*F.
2. Place grain in white crock in bag.
3. Mash in by pouring heated water over grain in crock. Place crock in oven with thermometer. Wait 75 min and monitor temp.
4. Heat additional 2 qt of water to 170*F
5. Remove grain bag and squeeze into white crock. Move grain bag into brew kettle and pour 2 qt heated water over grain bag. Stir, sit for 5-10 minutes, lift, drain, squeeze.
6. Add runnings from white crock to brew kettle, top off if needed, and begin to boil.

Notes: Target OG = 1067, ABV=6.1%, IBU=45. I'm not sure how you'd get such a low OG with this malt bill.
An avalanche of cross-continental
hop varieties give this porter
a complex spicy, resinous and
citrusy aroma, with a huge malt
bill providing a complex roasty
counterpoint. Digging deeper
into the flavour draws out cinder
toffee, bitter chocolate and hints of
woodsmoke.
Brewer's Tip: Mash in at a higher temperature to
leave more unfermentable sugars in the
wort. This gives the beer a sweeter
porter profile. |

Directions
Mash grains at 151-152° F (66-67° C) for an hour or until starch conversion is complete.
Mash out at 170° F (77° C) and sparge. Collect 8 gallons (30 L) of runoff, stir in dextrose,
and bring to a boil. Add hops as indicated in the recipe. After a 90 minute boil, chill wort
to 67° F (19° C) and transfer to fermenter. Pitch two packages of yeast or a yeast starter
and aerate well. Ferment at 67° F (19° C) until fermentation activity subsides, then rack
to secondary. Add first set of dry hops on top of the racked beer and age 7-9 days, then
add the second set. Age five more days then bottle or keg the beer.
Extract Substitution
Substitute 6.5 lb (3.0 kg) of light dry malt extract for two-row malt. Due to the large
hop bill for this recipe, a full wort boil is recommended. Steep grains in 1 gallon (3.8 L)
of water at 165° F (74° C) for 30 minutes, then remove and rinse grains with hot water.
Stir in dextrose and top up kettle to 8 gallons (30 L), and bring to a boil. Add hops as
indicated in the recipe. After a 90 minute boil, chill wort to 67° F (19° C) and transfer to
fermenter. Pitch two packages of yeast or a yeast starter and aerate well. Ferment at 67°
F (19° C) until fermentation activity subsides, then rack to secondary. Add first set of dry
hops on top of the racked beer and age 7-9 days then add the second set. Age five more

| Notes: Brewed 1/24/15. Strike water was about 170 and it cooled to about 153F. I recirculated about 2 gallons and it dropped down to 150F. PH was 5.4 which is right about where it was predicted. In kettle efficiency was 80% which is a bit lower than I expected but probably will be fine. Decided to do a hop stand (0min addition and cooled it quickly) at 180F but it dropped to 170F over the 15min. My efficiency was a bit less than I expected which might have been due to a quicker sparge. I also used more sparge water so possibly that diluted it more. Not sure why it happened this time. Pitching temp leveled out at 68F. 1/25 morning time it was fermenting at sitting at about 64F. Evening time it had risen to 67F so I cooled it a bit. 1/26/15 morning time it had drifted up to 67F so I cooled it a bit. 1/27 was 64F in the morning and it had drifted to about 67F by evening. 1/28 in the evening I took it out of the bath and it was sitting at 68F when I removed it. 2/7 dry hopped and took a gravity reading. 2/12 biofined with 2Tbls. Kegged 2/15 which means I dry hopped for 8 days vs 7. 2/28 I decided to further dry hop the brew in the keg. Also wanted to kick the carbonation up a bit more. |
