Notes: WLP 645 Brettanomyces Claussenii and White Labs French Saison pitched together. Brett C is fruity with no barnyard or poop smells. Adds great complexity and prolongs the longevity of the packaged beer. All my Saison are getting Brett C in the primary or added to the secondary split batch. 5 gallons split into two 3 gallon carboys. One getting brett C the other not. Usually always end up liking the Brett version better.

Transfered to corny keg on 7/18/2017, Finishing Gravity 1.003!

This beer is broad and relatively sweet but still has a clean, focused finish so does not stray into tasting cloy. This beer is massively hoppy but rather than the dominance of US hops that Craig Cooper refers to, I see a seamless weave between the piney, orange, lemon and grapefruit aromas of the US hops and the more focused bitterness, passionfruit flavours and floral aromatics of the Kiwi hops. In two words: Full + Focused

Notes: This is the first time choosing a pumpkin stout. I'm adding pumpkin to the mash along with pumpkin seeds which I plan on roasting before hand. I may add pumpkin to the boil but it's still up in the air.

| Notes: I created a tincture by adding 8oz of cocoa nibs in a mason jar and adding enough vodka to cover. Let the nibs sit for a week, shaking several time each day.
