Notes:
Total Water Volume Needed = 10.75 gal
Mash Water = 5.50 gal @ 165 Deg (Strike)
Mash Temp = 153 for 60 minutes
Sparge Water = 5.25 gal @ 170 Deg
Sparge Sit Time = 15 minutes
Pre-Boil Volume = 7.75 Gallons
Add 10 drops Fermcap-S before boil
Add Whirlfloc tablets 15 minutes left in boil
If applicable, add Corn Sugar with 15 minutes left on the boil
Filter hops by putting a 5 gallon paint strainer bag into the primary and pouring wort through the strainer before pitching yeast
Rehydrate US-05 prior to pitching
1) Warm the dry yeast to room temperature
2) In a sanitized container, prepare 1/2 cup of sterile water at 95-105°F
3) Sprinkle the dry yeast on top of the water, trying to avoid setting up large, dry clumps.
4) Let sit 15 minutes, then gently stir.
5) When the yeast has reconstituted, gently stir again to form a cream and let sit another 5 minutes.
6) Carefully and slowly, adjust the temperature of the yeast to within 15°F of the wort temperature.
7) Pitch the resultant cream into the fermentation vessel, ideally as soon as possible. |

Notes: 1. Steep grains in 160 degree water for 45 nimutes in 3 quarts water.
2. Rinse grain bag with 1.5 quarts water at 170 degrees.
3. Add dried malt extract, sugars, and water to make 3 gallons and bring to boil.
4. Add hops and boil for 60 minutes.
5. With 15 minutes left, turn off heat and stir in liquid malt extract.
6. Add cocoa powder (dissolved in hot water), second dose of hops, irish moss, and resume boiling.
7. Cool wort, transfer to fermenter and top up to 5 gallons.
8. Aerate well and pitch yeast. (liquid yeast with starter desired)
9. Ferment at 68-70 degrees for 7 days.
10. Transfer to secondary, add cocoa nibs, and let sit for 2 weeks.
11. Add extract to keg and rack beer to keg.
12. Force carbonate for 3-5 days. |

| Notes: Doc Brown's Great Scott Ale is a Scottish Style Ale inspired by the legendary Three Floyd's Robert the Bruce Ale. It pours a clear, brown-ruby color and retains a stout like light tan head. Doc Brown has mild milk chocolate, stone, mild fruit, roasted caramel, and mild nutty characteristics. Future versions would work towards improving the chocolate and roasted flavors, a better malt profile and a bit more sweet fruit on the finish. |

| Notes: Brewed 5/11/14. Sparge water use .9ml of acid. Not doing water adjustments or trying to correct mash pH this brew. Strike water was 166F which hit about 153F. I recirculated 2 gallons and hit 151F, supposed to be 150F but oh well. pH was 5.2 without any adjustment. Sparge runnings never went past 3 brix. Boiling for 90 min but only 60min with hops. Kettle efficiency was 90%. Decided to pitch on top of my Golden Strong cake which used the desired yeast. Didn't boil off quite as much so a bit left in the kettle. Maybe a quart or so. I got much better efficiency than I thought. Maybe because of a slower sparge. By morning the brew was sitting at 69F with little activity. Guess the 550 wasn't very active anymore. I pitched 2 packets of Danstar Belle Saison that I didn't rehydrate first. Hopefully that is enough yeast. Bottled this on 2/22/15 at 2.5 volumes. Bottle code SRB. |

very nice brew will brew it again nice and crisp will be a great summer brew
OG was higher by a bit 1.050 so ABV is a little more
but still a nice light beer
