Notes: 1. Bring 2.25 gallons filtered water to 160°F
2. Add nylon bag containing grains to water
3. Cover and steep at 155°F for 1 hour
4. Squeeze liquid out of beer with tongs
5. Bring mash to boil
6. At 31 min left in boil, add 0.1 oz Liberty hops, 1 oz maltodextrin, 1 tsp yeast nutrient
7. 9 min left in boil add 0.2 oz Centennial hops
8. After 60 min stop boil and remove from heat, add 0.2 oz Mt. Hood hops. Leave hops for 15 minutes post-boil.
9. Cover, leave overnight to cool to room temp.
10. Pour mash through filter into fermenter bucket, aerate.
11. Pitch one packet Safale S-05 yeast into mash.
12. Put lid on bucket with airlock
13. After 14 days of fermentation, bring 1 C of water and 1.0 oz priming sugar to a boil
15. Cool sugar solution to room temperature, rack beer onto sugar solution.
16. Bottle and let condition for 6 weeks before enjoying.

Notes: How to add your honey:
I used very floral honey in this brew, but you can use any type as long as it is natural and has no additives etc..
I mashed 20mins at 64C and 40minutes at 66C.
When you have 5 minutes left in the boil, take some of the hot wort in to a separate container and add / dissolve your honey there in the hot wort. Hot wort will also sanitize your container so no need to stress that. Once your honey is fully dissolved, your boil should be also already done. Add the honey infused liquid back to the wort and give a good stir and start cooling down your wort.
Brewers Clarex, add if you want / have it in hand. I used it only for clarify the beer faster, since I did not have the possibility to cold crash this beer. So you can skip it and use gelatin or skip all together.
Tasting Comment:
This beer is very floral and easy drinking beer and honey compliments the style very well. One of the best beers I've ever made!

Notes: Reserve 14 of the 16 ounces of milled, acidulated malt. Mash the remaining 2 ounces acid malt with Pilsner and Wheat malts, along with rice hulls at 149°F (65°C) and hold for 45 minutes. Add remaining acid malt and continue to mash, stirring every 15 minutes, for another 45 minutes. Don’t worry if mash temperature falls slightly during secondary mash.
Add heat to bring the mash temperature up to 168°F (76°C) and sparge at this temperature until runoff wort gravity reaches 1.008 (2° P) or pH 5.8 (whichever comes first). Collect enough wort in the kettle to allow for a final volume of 5.5 gallons after a 60 minute boil. Use fresh, whole coriander seed ground in a spice grinder or mortar and pestle, and add 5 minutes before the end of the boil. Chill to 70°F (21°C), aerate and pitch.
Ferment at 68°F (20°C) until terminal gravity is reached. Crash to 40°F (4°C) and cold condition for one week, then rack. Add salt and lactic acid to taste, blending thoroughly. Two ounces of lactic acid at bottling (along with the acid malt contribution from the mash) will result in a mildly tart gose, whereas 3 ounces will be noticeably tart. Package and carbonate or bottle and prime.
Note: If adding gyle, sugar or malt extract to prime, be sure to taste for the correct acid and salinity balance before blending in priming. |

Notes: Mill the raw wheat separately and make an oat porridge with enough water to keep it getting too firm. Add that to the kettle before the barley.
No boil, just a mash out to 75C then cool.
Ferment the wheat yeast until high krausen at 20C. Add the lacto and raise the temp to 25C. Add the brett once the sacch has finished. Keep the temp at 25C until 2 weeks are up, then crash it over 48 hours.
