Notes: - Balanced profile. Tan, lasting very creamy head, good lacing velvety. Good drinking stout.
- Mill the roasted grains, to get the best color and flavor go for an extremely fine grind, almost like dust, I use a coffee grinder.
*Bag and add the roasted grains, chocolate, roasted barley and black malt after the 90 minute mash rest is complete. This avoids lowering the mash pH too far and reduces the chance of astringency which can occur from over-steeping highly roasted grains. Once the 90 minute mash is over give it a good stir to mix it into the existing grain and hold for ~15 minutes; no more than 30 min. Squeezing the bag will result in releasing a little more extract but lower pH and give a harsh flavor. so avoid this.
- WLP004 English ale yeast adds a bit of fruitness in the background and is a bit sweeter. WLP007 Irish yeast has zero sweetness and comes out dry with a bit of a "twang". Both yeasts make this recipe a very good, smooth drinking stout.
- I go for a lower carbonatation and typically serve at a cool but definitely not cold temp, around 60° to bring out the flavors.
I've been told this tastes like chocolate milk. Very smooth and velvety. Keep the ABV below 5%. |

Notes: BPV = Blackberry Pomegranate Vanilla.
Going for a “milkshake” style sour, using lactose, rolled oats, and vanilla for mouthfeel, as well as a higher mash temp and some Crystal malt to leave some residual sweetness to balance the sour.
Pre-acidify with Lactic Acid down to a pH of 4.5 or so before starting the souring process. Kettle sour with Goodbelly (blackberry pomegranate flavor, natch! That’s actually where I got the flavor combo idea, since they were out of the mango flavor I usually use). Not doing a second boil on this one to kill the lacto (though you can if you prefer)... just pitch the Goodbelly around 95-100°F and leave until drops to 68° or so, then add the 1056 (or other neutral yeast) and ferment out. Then rack into secondary on to blackberries (frozen then thawed), pomegranate juice, and half of a vanilla bean (split and scraped; or can use 1 tsp extract). Dry hop just prior to packaging. |

Notes: My OG came in quite a bit higher than the calculator predicted. I assume because I let the mash work for 60 minutes vice 30, like I originally planned. (I screwed up). Didn't really want the ABV so high. Will update after fermentation is done and I have a FG.
UPDATE: So the ABV came in at 8.01. This beer didn't make it very long in the keg. It was incredible. After a few of my friends got a taste, it was history after two weeks.
I will definitely brew this again, however i will decrease the 2 Row by 2 lbs and the honey by 1 lb and will decrease the Amarillo by .25 oz at the 40 minute add. You can taste the honey, but was a little bit overwhelmed by the hops. |
