Created a starter of wild airborne microbes and left in a mini coolship overnight - left for five days and then added dregs from last sour batch which contained 3 fonteinen and cantillon dregs and displayed a huge amount of that character.
will practice the solero method and will obtain another 2 barrels and blend.
Transferred 1010@ Belgian golden ale with Brett and lactobascillus etcinto this barrel on 1/08/16 after removing one gallon to add apricot.

Notes: Split mash BIAB method. Bring 4.5 gallons of water up to approx. 162F then add grains to BIAB. Stir grains then cover. Maintain temp of 152F for 60 mins. About half way through, put the remaining 3 gallons of water in a separate pot and bring up to approx. 173F. Pull the grain bag out and allow to drip into the pot. Then dunk sparge the grain bag into the 3 gallon pot for 15 mins. Lift out grain bag and allow to drip. Combine the sparge pot into the mash pot and prepare for boil.
60 minute boil with hop additions as listed. Add 1lb of Honey at flame out and stir in to avoid scortching. Cool wort and pitch yeast. Ferment for 3 weeks at 64F ambient in fermentation chamber.
At kegging, siphon off 1qt of beer and bring to boil. Cut and scrape vanilla bean and add cinnamon stick, orange peel and ginger root in a grain bag and make a tea. Boil tea for 1-2 minutes to combine/sterilize. Add to keg. Add gelatin to keg to improve clarity. Allow to keg condition for another 2-3 weeks at serving temps. Add gas to carbonate, serve and enjoy! Transfer to secondary and leave until fermentation stops.
Dry hop with 1 oz. Citra for 5 days.
Cold crash 3 days with 1 tsp. Gelatin mixture (optional)
Remove from fridge, warm overnight, prime, bottle, and condition for 21 days.
This recipe is a mash-up of two excellent beer styles: Amber Ale and Rye Ale. The Amber Ale brings a malty flavor, medium to medium-full body, and a rich amber color, while the Rye brings a distinctive spicy grain note. The hop flavor on this beer is noticeable with a spicy hop character, with a noticeable hop bitterness. Definitely a beer to enjoy throughout the fall season.

Notes: Add 1/2 campden tablet, crushed, to 3 gal distilled water and heat. Add sugars and bring to boil for 60 minutes. Bring 2.25 gal distilled water and 1/2 campden tablet to boil for 15 minutes, just long enough to sterilize. Cool wort and top fermentor off to 5.5 gallons with sterilized water. Pitch and ferment at 70. Add RB extract and priming sugar at bottling. |

Notes: This batch of Adirondack Cream Ale is being brewed on 1/18/2016 with two changes from last years brewing of Adirondack Cream Ale on 3/5/2015.
Original Gravity where I buy the ingredients was out of 6 row so I substituted 2 row for 6 row in the original recipe from March 2015. This change in grain concentration and grain type may affect the flavor of the final beer. Who knows.
The second change is using another .50 ounce of Cluster in the last 20 minutes. Lets see if this makes a difference in the final product.
I was going to use a yeast started but opted not to due to the projected OG to be below the limit of when Whitelab says to use a starter (OG 1.070) I don't get to use my cool Erlenmeyer flask this go around.
1/25/16:
Racked off into glass carboy. Gravity an unbelievable 1.008. Checked hydrometer for accuracy at room temp tap water was 1.00 gm/ml. But it should not go that low given the grain bill. Last year the same thing happened I checked calibrations then too. All was well.
Current ABV calculations are coming out above 8 ABV
Set Carboy on kitchen counter for a day to check for activity and then into a cold closet to rest.
* After two hours the decanted beer showed no signs of restart so I added a low dose of LD Carlson;s Yeast Energizer (Nutrient Booster). Normal dose would be 2.5 teaspoons. I had only 1 1/2 teaspoons on hand so I used it.
Checked gravity on 2/4/2016 and found it to be 1.006 g/ml. I may soon.
Making the ABV 8.93 % Alcohol
Attenuation was 91% I think it is done.
2/7/16 - Fermentation not done. Witnessed airlock movement this morning. Keeping the Cream Ale in the glass carboy another week.
Projected bottling: Feb 15th
Projected aging in fermenters total: 4 weeks. 1 week in Primary and three in secondary carboy
2/14/16 - Racked off beer from glass carboy to bottling bucket. I have 5 gallons of beer to bottle. Checked gravity
OG - 1.74
FG - 1.002
Calc ABV - 9.45%
Used 3/4 cup Extra light DME boiled then put on an ice bath.
4.9 Gallons bottled.

Notes: Bring 30 qts water to 154 degrees. Add heat to maintain 154. Mash for 60 min. Sparge with 30 qts water at 170 degrees. With loss of water to grains, it should come out to about 14.5 gallons for boil. Boil, adding honey at flameout and add hops accordingly.
