Notes: Part 1 of my Helles Series "Ex-beer-ment": To brew three batches with the same malts, hops and water profile , and change the yeast and compare the tasting notes.
Pitch yeast at 62 deg F, free rise to 65-68 deg. F. Ferment under pressure at 1 bar (+/- 15 psi). At 2/3 final gravity raise temp slowly over 2 days to 70 deg. F. for D rest. under pressure at 1 bar. On day 9, crash to 38 deg. F for min. 24 hours. Transfer to conditioning at 34 deg. F. for min. 6 weeks (or as long as you can wait) under pressure at 15 psi.

Notes: - 1 to 1.5 lb air-popped popcorn in the mash.
- Air pop the popcorn and add to the milled malt just before mashing. (1 lb of popcorn is about 2 cups unpopped kernels). Popcorn will soak up the water about the same amount as milled grain does and sink. I stir once during the step mash.
- Add the light honey at flame out. Do not boil honey or you will loose the honey flavor, (orange blossom, light clover etc). I use raw clover but any will work.
- Aim for low IBUs, 10-15 at most, no more or it will overshadow the honey.
- Use very low mineral water, I start with distilled.
-Do not do a protein rest, it destroys the head on this beer! A hochkurz mash schedule or simple infusion mash @ 150 degrees is fine.
- Use a high attenuating yeast, Rocky mountain, Diamond, Copenhagen, 34/70. You dont want any fruity tastes from the yeast.
- Most definitely improves with lagering; 6-8 weeks. The light honey taste will start to become noticeable. If you can keep out of it while it lagers its a great beer.
*Named after my dog Popcorn, who was my quality control guy on brew day. He vigilantly watched for anything that fell on the floor and got a bowl of spent grain at the end of the mash. I made dog cookies out of the remaining adding either pumpkin or peanut butter. PS he absolutely hated popcorn, wouldnt touch it, go figure...He passed 03/29/22 and is greatly missed. |

| Notes: My first recipe, tried to emulate a few that I've seen online and add a little twist. Going for a beer that has a session beer appeal, with a little bite. The .2 oz 30 minute Centennial and 15 minute Columbus additions will add the bitter, while the 5 minute Citra addition, and the second Citra addition at flame out providing a citrus like forefront. |

OH man, I'm excited about the new recipe. =D
There are no notes from the ageing process I used last time. Briefly, . . .
I used my environmental chamber at work to effectively lager the brew (ale yeast), basically, drop the temp to about 52F, and added oak probably 3 times. Each time soaking in bourbon and adding all soaking bourbon, too. I probably added bourbon in 1-2 week, periods then removed, first the cubes, then the spirals I bought. All new wood. This time, I'll use the same wood, but I've had the cubes in bulliet rye whiskey for about two months now. I think, maybe Maker's. No straight Whiskey. I saved the bottle. This time, I'll shoot from the hip and age in my closet, but the Nov. temps should be nice for ageing (ave ~ 60F). Add oak around T-Day and age as long as I can wait, or until Xmas. Bottle on Dec 11th to have ready for Xmas. ONly 2 wks ageing :\ . . . New Year Beer ? |

--> total inc 13 IBU
14 -> 12 oz C60
Light DME -> Pilsen DME
5 -> 10 g Gypsum
3 -> 0 g Chalk
New version a little bitter, and hop flavor jumbled. Go back to perle (from .75 columbus to .5 perle). Back off on Gypsum (10->8g). Pump up C60 (12->14oz) |
