Cacao Nibs - Roast 9 oz. in oven for 125-20 mins @ 225-275F. Soak in vodka. Add to fermenter
Vanilla Beans - Split, spread, scrape 2 beans into vial with vodka for 2 weeks. Add to keg.
Oak Staves - Soak in bourbon during fermentation, add to keg.
Coffee - Grind 8 oz. dark roast. Soak in 4 cups cold water for 24 hrs. Strain and add to keg. |

Notes: 1. In 2-3 litres of water, boil goldings, crushed coriander seeds, cumin and dried orange/mandarine rind.
2. At the 5 minute mark, add the malt.
3. At the 10 minute mark, add the Fuggles hops.
4. At the 15 minute mark, remove from heat and let stand for 15 minutes.
5. Blend oats with water and strain. Simmer for a few minutes to sterilise and add to the fermenter.
6. Top up fermenter with cold water
7. Take your SG reading.
8. Add the yeast. Ideal pitch temp is 18-22 degrees |

Had a few cascade hops ready to be picked so I dumped a few in at 5 minutes.
Ferment 64F for four to five days, bump to 68F till fermentation completes.
Update: Skip the cascade wet hops the beer is better without the cascade. |
