I really enjoyed number3, but was having efficiency problems I think I have fixed now. London pride is under 5% anyway. Staying low on hops, but kicking up malt and fiddling with oats to see if it has a improved mouthfeel effect.
Also messing with the West Yorkshire yeast. I cannot effectively wash the ESB Wyeast so looking around. Going to try Thames after this one.

Notes: This is a quick easy (DME) experiment using Meridian hops. I had a Meridian pale ale and was very surprised! Meridian gives a nice smooth juicy lemon flavor.
In the hop listing add .15 Citra & .15 Meridian at 0 min flame out for aroma and flavor. Let it Hopstand (I used whirlpool for lack of option) for 10 if sanitary for some IBUs. Otherwise this is a great Pale Ale too.
After fermentation (give it 2 weeks) dry hop with .20 Citra + .20 Meridian for another 3-5 days.
Transfer to secondary and cold crash (if you can) for a day or two before priming and bottling. |

| Notes: Make a porter,, add Ginger Snap spices at 10 minutes left of boil. (Actually the spice mix is 1/4 of the regular ginger snap spice ingredients list when making the cookie. Spice list is: 1/8 TSP salt, ginger, white pepper, dry mustard; 1/4 TSP ginger; 1/16 TSP clove. BE PRECISE.) Molasses goes in at 5 minutes. Chill, pitch yeast. Ferment three weeks, bottle and age for a few months. (Can drink in two weeks but ages very nicely.) |

Mash at 154F for 60 min.
boil for 90 minutes.
kill the flame, add post boil hops and let stand for 60 minutes. chill quickly and pitch a healthy amount of yeast; aerate well at pitching and once again as fermentation begins (bubbles in blow off tube).
Ferment at 68F for 14-17 days. cold crash to knock everything down, NO TRANSFER, raise back to 68F and dry hop. 3 day dry hop. bottle and let sit for 21 days.
