Kit was given to me to brew, featuring a 9-month old grain crush. BRY-97 yeast was expired, so I'm using my slurry Conan on this.
3, 1oz bags of Simcoe included of unknown storage quality these last 9 months will be used.
Pilsen DME is getting thrown into this recipe because I have an partial bag lying around to get rid of. QP of honey malt same way.
Therefore, I'm going to boil a smaller volume of over-all water (7 gal vs 7.6 gal), increase boil time to 75 minutes (+15 from 60) and then top up to 1.046 not knowing how well the 2-row converts overall. |

| Notes: Kettle Sour Using Lacto Plantarum - Omega OYL-605; Goodbelly Mango or Shots; Swanson Probiotics. 2L Starter, 1.040, 3 days @ 100F. Add 4# acidulated malt after 60 min mash to drop pH to 4.5, add lactic acid to adjust if needed. Collect 26 gallons wort and bring to 180F for 10-15 min, chill to 100F, pitch Lacto starter. Purge with CO2, cover let sit at RT for 18-24hrs. Freefall should be around 85-90F after 24hrs. Check pH, target 3.2-3.4pH. Boil as normal. |

Create 8 gallons sparge water. Bring to 154° strike temperature
Prime pump. Push water through hose.
60 minutes – Add tablespoon 5.2 pH balancer
Add grain – Sparge at 152° for ___ minutes (Minimum 60)
(One gallon loss during sparge process)
Water burn rate: 1-1/2 gallon per hour.
Drain GRAIN from kettle. Adjust water height of ___ (7 gallons)
Boil clean water for end of boil session adjustment
Mash Option dark beers – Add x tablespoon Calcium Carbonate
60 minutes – Add 2 drops Fermcap
