Notes: During primary fermentation, split 2-3 fresh vanilla pods add into a glass jar with bourbon oak chips, add 50-100ml bourbon. Ensure glass jar has air tight lid.
After fermentation has finished, move into secondary fermenter. Drain bourbon - retaining vanilla beans & oak chips. Put chips & beans into hop bag, place in secondary fermenter for 5-7 days.
Optional: When kegging, split another 1-3 vanilla pods and add to keg.
Keg condition for 7-10 days before serving. |

Notes: This recipe is asked for by all of my craft beer drinking friends. The buckwheat honey adds an just a small earthy, slightly sharp bite in the beginning that ends smooooth and creamy.
last year I doubled the buckwheat honey from 1 to 2 lb. and the increased alcohol (1%) and flavor balanced out exceptionally well. I've changed the malts and upping the honey for this year's batch to gauge the impact. I hope it works out. |

- Start the yeast at 70f for 1 day, then ramp up naturally to 78-80F, maintain till FG is reached then condition in bucket or carboy for 1-2 weeks at 70F till final gravity,target ferm temp is 79F ±2. Should ferment very dry.
- Use Fermwrap for temp control
- Maybe skip the cane sugar addition and just keep it simple. (6Oz if used)
