Notes: Brewing on Brewer's Edge Mash & Boil
1. Started with 4 gallons of distilled water and added all salts listed to Mash - heated to 167F and hit mash temp perfectly on mash in
2. Mashed normally for 60 mins with a brief recirc using a pump at 30 mins.
PH - 5.2
3. Mashed out at 170 for 10 mins then sparged with room temp jugs of RO - ~3.75 gallons
4. Boiled and followed hop schedule and whirlpool.
5. Cooled and transferred to fermenter. Set in chamber and cooled to 66 to pitch decanted 1318 starter
6. Fermentation activity in a few hours. Dry hopped day 3 then let ferment for 10 days before crash cooling with co2 filled balloons on the blowoff. Took about 1-2 fills/day
7. Closed transferred to keg with loose dry hop 2 in it. Used a clear beer draught system. Let the beer sit at room temp for 24 hours.
8. Put on co2 at 2.3 lbs

Snow Goose from the Wild Goose Brewing Co. on Maryland’s Eastern Shore is one of my all-time favorites. This annual winter treat always finds me stashing away plenty for summer. However, no more stashing is required as evidenced below! If I owned a brewpub, this would be my house beer.

Ingredients:
10 lbs. pale ale malt
1 lb. crystal malt, 60° Lovibond
0.25 lb. chocolate malt
0.25 lb. roasted barley
1 lb. malted wheat
1.5 oz. Cascade hops (6% alpha acid), 1 oz. for 60 min., 0.5 oz. for dryhopping
1 oz. Fuggle hops (6% alpha acid), 0.5 oz. for 45 min., 0.5 oz. for 30 min.
1 oz. Goldings hops (5% alpha acid), to steep
Wyeast 1318 (London Ale III)
Step by Step
Add grains to 4 gal. of water at 168° F for mash temperature of 154° F. Sparge and collect 6 gal. wort. Boil 15 min., then add 1 oz. Cascade. Boil 15 min. more, then add 0.5 oz. Fuggles. Boil 15 min. more, then add another 0.5 oz. Fuggles. Boil for 30 min. more for a total boil of 75 min. Turn off heat and steep 1 oz. Goldings hops for 10-20 min. Chill, aerate, and pitch yeast.
Ferment in primary at 64°-74° F for four to eight days and rack to secondary for seven to 10 days. Bottle or keg as usual. |

| Notes: Three temperature profiles that seem to be popular among homebrewers are just off boil range 190–212 °F (88–100 °C), the sub-isomerization range 160–170 °F (71–77 °C), and a tepid hop stand range 140–150 °F (60–66 °C). The 190–212 °F (88–100 °C) range will allow essential oils with higher flashpoints an easier time to solubulize into the wort and also will allow some alpha acid isomerization to occur with the best estimates of between 5–15% utilization. Some homebrewers will keep their kettle burner on low to keep the temperature of the wort elevated above 200 °F (93 °C) during their extended hop stands which would better emulate the conditions in commercial whirlpools. A hop stand in the 160–170 °F (71–77 °C) range will basically shut down the alpha acid isomerization reaction and the lower temperatures will reduce the vaporization of the essential oils. Homebrewers can use their wort chillers to bring the wort down to this range before adding the knockout hops or they can add a second dose of knockout hops. The 140–150 °F (60–66 °C) range will once again reduce vaporization of the low flashpoint oils, but may take longer to get the same amount of essential oils extracted. |
