Notes: Add the following to the fermentor:
12 lbs honey
2.5 lbs chopped fresh pineapple
0.5 teaspoons ground cinnamon
2 cloves
1 teaspoon yeast nutrient
Add water to bring starting gravity to 1.12.
Pitch yeast.
Ferment at 60 F for 1 month before racking. Yeast will not ferment dry so this will be a sweet mead. |

After mashing, ice (est. 0.25 qt) to cool to 120F
Add 0.5 lb unmilled 2-row to inoculate with natural lactobacillus
Cover surface with plastic wrap to exclude oxygen
Maintain at 90F-120F for 48h
A half-vial of yeast is sufficient, although a little slow-starting; would probably use a dry yeast next time. |

DIRECTIONS
Treat brewing water with 1.7 g gypsum and 1.7 g calcium chloride, both in the mash and in the kettle. Single infusion mash at 152° F (67° C) for 60 minutes. When fermentation is almost finished, raise temperature to 60° F (16° C) and hold until complete. Transfer to a keg and lager for 6 weeks.
Primary Fermentation: 14 days at 50º F (10º C)
Secondary Fermentation: 45 days at 36º F (2º C)
Carbonate to 2.4 volumes of CO2.

Regarding Blood Oranges: Peel oranges and separate sections of fruit. Discard half of the peels. Cut fruit into small pieces. Grate the peel and save the rind only! Heat fruit and peels in 1/2 gallon water to 160-F and then turn off heat. Let it steep as it cools. Pour into fermenter when cooled.
1/2 gallon refers to 5.5 gallon run
