Notes: run mash rakes and recirc through vorlauf for first 15 min after mash in and then then turn of rakes and recirc and let sit another 60 min (75 min total saccharification rest)
Then vorlauf for 15 min for relatively clear wort (may be cloudier than normal due to high percentage of wheat).
Lauter and sparge very slowly taking between 60 to 90 min to collect 240 gal in kettle. Start pump on lowest speed (20 or 25%?) and restrict output to collect ~50 to 60 gal every 15 min. flow meter should read ~12 to 15 L/min
fermcap and first wort hops added to BK as it starts to fill
Note 90 min boil for DMS reduction with higher percentage of Pilsner malt

add yeastx-82 with 15 min left in boil
Whirlpool 10 min, let rest 15 min before knockout
Add ALDC directly to FV just before knockout

Oxygenate for 60 min at 1 L/min.
harvest 4 gal (~30 to 35 lb) of creamy WLP300 yeast from PB0128 Monkey and the Engineer and pitch directly

Notes: Brewed 06/28/21. Mash in w/12.5 L city water with 2 g CaCl2. Mash pH 5.3. 10' rest at 130 F, raise to 148 F, pull decoction. Return decoction, 10' at 156 F, then raise to 168 F for 10'. Sparge w/water w 1 g CaCl2, 3 g CaSO4, pH 5.5. Pitch re-started dregs from 2.5 L starter, ferment at 50 F. Racked to keg on 07/18, raise temp to 62 F for 2 days for diacetyl rest, then placed in serving fridge at 42 F.

- Actually used UK SImpsons Crystal 36-43L (not 30L as stated above)
- Took mash water and sparge water volumes from the Grainfather brew session tool
- Expecting mash efficiency of 86% which implies a pre boil gravity of 1.049
- Mash temp settled right it at ~152F
- Hit 12.0 plato pre boil gravity which converts to 1.048 vs. 1.049 target so 86% mash efficiency vs. 86% expected. Had ~6.85 gallons pre boil vs. 6.75 expected so mash efficiency was spot on just has some extra pre boil volume.
- Expecting to boil down to ~6 (6.15) gallons so boil-off tool estimates 1.053 (was 1.055 at 6.75 pre goil) OG. Actual original gravity reading was 13.0 plato which converts to 1.053 vs 1.053 expected.
- After boil had ~6.15 gallons (expected 6.15) in the kettle and ~5.75 gallons made it into the fermenter
- Pitched the yeast starter and set fermentation chamber at 67F,
- Packaged on 9/1/19, FG was 1.011 (at 72F) which converts to 1.012 so 77% attenuation vs 75% avg. and 77% expected |
