Ferment at 69 °F, then raise the temperature to 72 °F for a diacetyl rest.
Carbonate to taste, to anywhere between 1.0 volumes CO2 (for something like a cask ale) up to 2.0 volumes
The water adjuncts are obviously specific to my local water. |

Notes:
I'd say the lime is noticeable but not quite prevalent enough. I would try upping it to 2/3oz next time. I had intended to add 1oz of zest but forgot to actually zest any limes until the 10 min addition went in - so we got about 8 grams before it was time to toss it in.
All in all I'd say this recipe is great. Noticeable hoppiness in a 4.5%ABV beer. It's really been a hit with my friends during these hot Florida days we've been having.
EDIT: Forgot to mention, went from grain to glass in 11 days. |

add the spicy thyme at end of boil along with the molasses
columbus for a hint of citrus, simcoe for the piney-hopefully the thyme plays off these flavors, bravo for bittering for its fruity and floral aromas, and falconer's flight for aroma
add 2 handfuls for 2 gallons of toasted pecans at 5 min left in the boil
Higher temp, say 160, will give a somewhat sweeter richer body beer.

Notes: This recipe is designed to make a double batch and I will only be fermenting 5.5 gallons for myself. 5.5 gallons to use WLP320 and four 1-gal batches to use various dry yeasts to compare results.
Strike water was at 164 and after adding grain the mash began at 158.
Excellent palate with strong citrus notes. Will definitely brew this again. |

Steep: 1.5 oz black patent in 1 qt water overnight. After steeping & straining: You might end up with ~24–28 fl oz of dark liquid. Add Half. Taste. Maybe add other half. 1.1g of table salt per keg gives a jump to 20ppm sodium and 140ppm chloride.

2oz dry flower chinook for remaining 4.50 gallons (when other 4.5 gallons are removed for keg soured)
1 keg clean (Lutra)
1 keg L. Planatrum + Lutra co-pitched @ 92f
1 day - 2 psi spund
2-3 days - 15 spund
Mash low and slow (145f -- so strike 155f)
Add 5g-8g of 88% lactic acid PER Kettlesoured KEG to fill in the gaps. Otherwise it falls short at X.X pH. Salt to taste in glass. |
