| Notes: Steep specialty grains for 30 minutes at 150-160 degrees. Remove grains, stir in liquid & dry extract and bring to a rolling boil. After your pot is at a rolling boil, add 1oz of CTZ and start a timer counting down from 60 minutes. With 1 minute remaining add 1oz of Chinook. Cool down the wort to 70 degrees and take a reading with your hydrometer. (Write that number down) It should be around 1.065. Sprinkle the yeast over the wort, seal the fermenter and airlock. After about 7 Days, transfer to the secondary fermenter and add 1oz of Simcoe. Wait 3 days and take a hydrometer reading and if it is about 1.015 you are ready to bottle. |

Chill wort to pitching temp of 48°-53°F (9°-12°C), pitch adequately sized starter (decanted), set regulator to initial fermentation temp between 50°-55°F (10°-13°C), and leave the beer to ferment until it is at least 50% attenuated. Expect to leave at temp for 5-8 days.
Once 50% attenuation is reached, remove the probe from the side of the fermentor so it measures ambient temp in the chamber and start bumping the regulator up 5°F every 12 hours until it reaches 65°-68°F (18°-20°C). Allow the beer to remain at this temp until fermentation is complete and the yeast have cleaned-up after themselves, which can take anywhere from 4 to 10 days.
When FG is stable and no diacetyl or acetaldehyde is detected in the beer, begin ramping the temp down in 5°-8°F increments every 12 hours or so until it reaches 30°-32°F (-1°-0°C). Allow the beer to remain at this temp for 3-5 days to cold crash. |

Notes: Split batch - 5.5 gallons Kolsch ale yeast, 5.5 gallons Belgian (Wyeast 3655).
Kolsch - 2L starter + Clarity Ferm. This half gets the fridge. Start on the cool end for 4-5 days, bump up to finish out, then cold crash for a couple of weeks.
Belgian - 2L starter, but keep 500ml aside. Pitch at 65F, then allow to free-rise at cellar temp.
We will need Fermcap for this one before the boil. |
