Notes: Sugar in fermentables are calculated from marshmallows added to boil.
Borrowed recipe base from Mack. Sounded delish. Stripped back a bit to experiment.
Forgot to mash out. Too drunk.
Not sure if final gravity is right yet. Will update. Was not right. Was better. |

Notes: if you have a small orchard in your backyard its very easy to find yourself with and abundance damaged, spoiling, and unpretty apples. Boil them down to create a strong refreshing beverage with this new england style cider style american ale recipe.
batch sparge base grain tuntil 3 gallons of wart is extracted at the desired gravity, mix with 3 gallon apple butter decoction into 5 gallon kettle for final boil of 6 min where you will dissolve the brown sugar and add your raisins, chill in the fridge, transfer to fermenter and pitch yeast
champagne yeast will fermant the wary completely dry within 14 days, after 13 days you have the option to prime and bottle or to rach off and add mor sugar for a true new england stlye dopplebock cider
note: raisins help to promote the laungevity of the fermentation making double fermentation an option so you can add the sugar later or add even more after that, champagne yeast usually eats whatever you give it.

Notes: =================================
Aug 2024
Not remembering what happened on this brew. No notes anywhere. I think I left it in the fermenter for a long time maybe over thanksgiving and christmas and didn't package until after new year. It probably tasted bad and I dumped most of it. Not sure if I ever did the oak trick either.
I will say though I found a bottle in the fridge last night and although it was a low fill and really under carbed it was pretty good didn't seem to have any off flavors, tasted great and on point. Really clear. There was a lot of ugly sediment in the bottle though. Not sure if I bottle conditioned or what.

NOV 2022
Brew day didnt have any bittering or hallertau

i think im about to brew this.
the 7.5 gallons should get me 7 gallons total brew. can bottle 2-3 gallons worth directly from fermenter to bottle condition, then keg the rest where it will get the oak cubes.
the oak idea is partially inspired by allagash curieux which EJ shared at a capsoul meeting this past summer
i think i would do my oak without the bourbon though
https://www.allagash.com/beer/curieux/
==================================
10/18/2022
scaled to 7.5 gallons
adjustments to grain bill and hops for even numbers.
considering doing RO dilute for a crisper brew?
if all tap water, consider more bittering hops (upper end of acceptable IBU) to balance?
==================================
6/30/2022
initial recipe creation! originally created this trying to think of a way to make a dent in a sack of pilsner malt i was gifted.
going with a very basic simple recipe based on craft beer & brewing link. i would think maybe some carapils for head but they did not suggest any. should probably bottle condition this? could possibly brew a double batch of this and oak age half. or possibly brew 7 gallons (single fermenter) and bottle straight from fermenter, add oak, then bottle the rest a week or so later? or keg the oak version if fermenter space needed.
