Notes: Mash for 60–90 minutes at 147°F (64°C). Boil for 90 minutes, following the hops schedule. You can add the dextrose as soon as the wort comes to a boil (because it can take a while to dissolve all of that sugar), but it can just as easily be added at the end of the boil with the whirlpool hops.
Ferment at the high end of your yeast’s temperature tolerance. After terminal gravity is achieved, condition the beer for one month at cellar temperature. (Or shorter. Or longer. Or warmer. Or colder. Best to experiment with this period of maturation). Bottle-condition to a carbonation 3.2–3.7 volumes of CO2. |

4ml was too acidic, trying 2ml
Champaign yeast left a sulfer aroma. trying american ale yeast as I currently have a beer fermenting with it.
Second attempt will do all additions in a 1.5L starter then water down (with RO) after fermentation is complete.
Continuing with Idaho Gem, the last batch was tasty and I have a lot on hand. |

By tweaking the hop schedule, we can make a “New England Grodziskie” that’s got a lot more of that hoppy, herbal, spicy flavor. For that recipe we add 1 oz. (28 g) Lubelski at the start of the boil, 1 oz. (28 g) at the beginning of a 15-minute whirlpool, and 1 oz. (28 g) dry hop addition at high kräusen. |

Notes: Decidi fazer uma sour com adição de uma polpa de frutas vermelhas de uma IPA que eu tinha maturado.
A polpa já estava lupulada. Adicionei faltando 20 minutos para terminar a fervura, de modo que o objeetivo era minimizar o amargor. Os lupulos não serão adicionados. Talvez um dry-hopping.
