Mash at 152°F (67°C) for 60 minutes or until conversion is complete. Add the FWH hops during runoff, immediately after vorlauf, and allow them to steep in the hot wort as the mash is sparged.
Boil for 90 minutes. Whirlpool for 40 minutes (from start to rest) following the hops schedule.
Pitch the yeast and ferment at 67°F (19°C) for 2–3 days, then allow the temperature to rise slowly to 73°F (23°C) by the end of fermentation to ensure full attenuation. When fermentation reaches 1.5–2° Plato from terminal gravity (1.020–1.022), drop temp to 14C and add the first dry-hop addition. About 3 days later do a cone dump and add the second dry-hop addition for another 3 days. Cold crash to 1C and then do another cone dump.
Package at 2.6 volumes of CO2 and consume fresh. |

Notes: 1500ml of organic 100% pinapple puree added after primary fermentation. At the same time took out dryhop bag since they had been in the FV for 6 days (where out of town)and had little hop burn. Waited 3~4 days for pinapple to ferment and then cold crushed (only around 12c for 1d). And bottle carbed with 108g tablesugar. (actual c02 is 2.3 cause i got 19L of pure beer volume.)
Picture after 5d in bottles. Definetly need 1w conditioning to fully carb and then move them to fridge.
It was already delicious. No sign of hopburn anymore. Got some tropical pinapple and even peach flavor.
Next time i would dryhop same time when adding puree. And let it sit 3d around 15-17. And use Bru1 instead of galaxy for more pinapple flavour. |

brew night - updating recipe down from targeted 70% efficiency / 7.98abv to actual 60% eff / 6.8%abv smh not sure why. this was the first night i fooled with induction plate and vorlauf. prob just gonna let it ride and not fool with dme.

changing the OFFSZN -> GTH2020 to this tbd named NEIPA. i have 4 oz galaxy on hand so drafting a recipe to use those. I figure using most of them in dry hop would be best utilization. originally thought about using citra mosaic galaxy equal portions but slashed the citra for simplicity. im thinking 8oz total hops should be good enough, we will see. adding a tad of warrior hops for a tiny bit of bitterness, so i can use the flavor hops all in whirlpool. calculator says NEIPA IBU can be as low as 25 so im using that as a lower limit, aiming for about 35. how juicy can we get before its too sweet? also i know many neipa recipes and even some of mine have oat malt but i just think that flavor goes better with the milkshake and not here. i want hops, not necessarily that sweet stuff.
UPDATE 4/13/2020
thinking about remodeling this. this time we are borrowing the malt bill from the OFFSZN allagash clone. will plan to do the same hop schedule, although its kind of made up. SHOULD get equal amounts of each hop then combine, cant say i will hold to that, stay tuned for brew day notes. may not spring for rva manchester, but rather use whatever is on hand, 1056, or london ale, or possibly will try out kviek.

C5 hop is a combo of cascade centennial citra columbus and chinook. i had more on hand of cascade and centennial so i did 1.2 centennial and 1.3 cascade , 1oz everything else for a total of 6 oz used. calculated the weighted average of the AA, hopefully that checks out.
using reused london ale yeast from a previous batch amber lamps. the yeast was never taken out of the fermentor. (taking half of the yeast to use on a barleywine im also brewing tonight) |

Notes: FINAL:
Stap 1: je watercompositie. Start met 42 liter water.
Water aanvullen met 3.3 gram gips (calciumsulfaat) en 7.5 gram calciumchloride. Ik heb 33% (w/w) oplossing, dus 22,5 gram nodig.
Doel: 220 ppm CL en 100 ppm SO4
Maischen: 30 liter op 70 graden, 7 kg mout = ±4.3 L/kg
Aanzuren met fosforzuur 75% tot pH ongeveer 5.2-5.4. voorzichtig! beetje bij beetje! DOE DIT OOK MET HET SPOELWATER.
Spoelen: 10 a 15 liter
