Thanks to @trialben for recommending water profile and pH, and @joshhughes for suggesting US-05
For the second batch of this beer, switched base grain from Golden Promise to Rahr Pale Ale Malt. Also updated source water from RO to Eugene city water. Yeast changed to US-05.
For version 3, switched hops amount for bittering charge, and switched out Cascade for Chinook in aroma/flavor addition. Also using a new yeast, Wyeast 1332 Northwest Ale.
This latest iteration keeps the grain bill from v2 and v3, and will use whatever bittering and aroma hops that are at hand to achieve 45+/- IBU’s at 3:1
Since a very fresh slurry of Wyeast 1056 is available, it will be put to use.
Intend to bottle this beer. |

Notes: Make a 1.5 L yeast starter= 0.76M cells / mL / °P estimated.
Cool with chiller to 108 F, stop chiller, add whirlpool hop, hold 60 minutes at 108 F. then chill as normal to 75 F. Pitch starter at 70 - 75 F, then cool to 67 F after 12-24 hours. Hold at 67 deg F for remainder of active fermentation, then di-acetyl rest for several days at 74 deg F, just before end of fermentation, specific gravity around 1.02.
Leave fermenter covered with foil during initial fermentation, until adding dry hops. Dry hop in Primary after high Krausen, about 3 - 4 days after pitching yeast, and before fermentation is complete, i.e. should still be seeing activity of yeast, specific gravity at around 1.025. Add airlock after dry hop. Cool to 35 F for several days in Primary after fermentation is complete, then use a closed transfer to a purged keg.

2 oz ground Sumatran coffee
2 oz ground Kona coffee
2.5 oz dark bittersweet chocolate
1.5 oz unsweetened chocolate baking nibs
WLP001 or WY1056 (3.5L starter)
Add Sumatran coffee and 2 chocolate varieties at the end of the boil.

Fermentation:
62-64 x 5 days. Increased to 65-66F x 5 days.
Dry bean with 2oz Kona coffee (cracked/crushed with rolling pin) in a bag. 2 oz cacao nibs + 1 oz bittersweet bakers chocolate in separate bag. Coffee left in contact x 48 hours. Chocolate left in contact x 4 days.
