Notes: Local recipe from LHBS. This recipe uses less common Australian variety of hops with primarily US grain.
Aroma: Mild, fruity/grape-like hop aroma
Flavor: Moderately bitter and hoppy. All Southern Hemisphere hops give a unique character based around fruit and the grape-and-grapevine signature Nelson Sauvin flavor. The C-10 adds a slight sweetness.
Mouth-feel: Medium-light body with mooderate Co2 Levels.5
5/9/2013. Fully carbonated in keg. First taste. Ibu higher than target for sure. Color is dead on. Left dry hop in extra 4 days -oops- that explains bitterness. Fell short on final volume by about 2-3 gallons. Must have converted sparge wrong when i adjusted up batch size. Not a bad problem. Stronger malt flavor, like a baby imperial. Ha!
Also failed to take fg. Will estimate using the field sobriety method. Enjoy!

Mash at 149°F (65°C) for 60 minutes or until conversion is complete. Add half of the water salt additions to the mash and the rest at sparge. Add the FWH hops during runoff, immediately after vorlauf, and allow them to steep in the hot wort as the mash is sparged.
Boil for 90 minutes. Whirlpool for 40 minutes (from start to rest) following the hops schedule.
Pitch the yeast and ferment at 67°F (19°C) for 2–3 days, then allow the temperature to rise slowly to 73°F (23°C) by the end of fermentation to ensure full attenuation. When fermentation reaches 1.5–2° Plato from terminal gravity (1.020–1.022), add the first dry-hop addition. About 3 days later, add the second dry-hop addition for another 3 days.
Dump sediment before 2nd dry hop and after cold crash.
Package at 2.6 volumes of CO2 and consume fresh. |

Notes: MASH:
Mash with 17.9 L and when the water reaches 158°F, slowly add the grain, stirring gently as you do to avoid dry
clumps. Set the mash up as per the Grainfather
instructions. Mash for 90 minutes at 148°F.
MASH OUT:
After 60 minutes, input a temperature of 167°F
for the mash out. Recirculate the wort at 167°F
for 10 minutes.
SPARGE:
Sparge with 9.3 L (4.4 US Gal) of water. This water
must be at 167°F.
***The infusion water temperature varies with the water-to-grain ratio being used for the mash, but generally the initial "strike water" temperature is 10-15. · °F above the target mash temperature. The equation is listed below in the section, "Calculations for Infusions."
A Hybrid Mash Conversion Profile
One trick I see some advanced brewers use is to include a step both at a low conversion temperature (say 145F/63 C) and a second mash step at high conversion temperature (say 155F/68 C). This results in very high sugar conversion, and a very clean, light bodied beer. It does this by activating both the alpha and beta amylase in sequence. It is useful primarily for beers that require a clean, dry finish – and is most often associated with lagers.

Tasted after 6 weeks , very good caramel ale taste, not so much hop coming through, someting for Esb lovers to have in stock , serve at 8-14C
Be careful with water HP around 5.2 and qvick cooling, for me 20 min from 100 to 20C (212F to 68F )
After yeast pitching splash hard for 2 min. Bottle after ca 1 week.
