Yeast WLP500. Trappist... From one of the few remaining Trappist breweries remaining in the world, this yeast produces the distinctive fruitiness and plum characteristics. Excellent yeast for high gravity beers, Belgian ales, dubbels and trippels.
If making Saison.... Yeast WLP565.... Classic Saison yeast from Wallonia. It produces earthy, peppery, and spicy notes. Slightly sweet. With high gravity saisons, brewers may wish to dry the beer with an alternate yeast added after 75% fermentation.
Note to brewers: This strain tends to stall out in fermentation and then restart as long as two weeks later. Make sure the wort is well-oxygenated and allow the temperature to free rise in order to ensure complete fermentation. Some brewers add WLP001 to finish. |

Mash at 149°F (65°C) for 60 minutes or until conversion is complete. Add half of the water salt additions to the mash and the rest at sparge. Add the FWH hops during runoff, immediately after vorlauf, and allow them to steep in the hot wort as the mash is sparged.
Boil for 90 minutes. Whirlpool for 40 minutes (from start to rest) following the hops schedule.
Pitch the yeast and ferment at 67°F (19°C) for 2–3 days, then allow the temperature to rise slowly to 73°F (23°C) by the end of fermentation to ensure full attenuation. When fermentation reaches 1.5–2° Plato from terminal gravity (1.020–1.022), add the first dry-hop addition. About 3 days later, add the second dry-hop addition for another 3 days.
Dump sediment before 2nd dry hop and after cold crash.
Package at 2.6 volumes of CO2 and consume fresh. |

| Notes: Sour mash technique. Mash as usual until time to sparge. Don't sparge, let mash get down to 120 degrees, take 8ozs of milled unmalted grains and mix them in with the cooled mash. Put aluminum foil directly on top of the mash. I have a metal mash tun so I left it on the burner, put a sleeping bag over the mash tun and put a heater in front of it to maintain a temp above 90 but below 125 degrees. Only had to turn heater on twice a day for about an hour each time. Leave for 24 hours and sparge as usual. Very delicious and not overpowering sour. Enjoy! |

Only point missing for style is IBUs which are 30 instead of the minimum of 50. This can be fixed by adjusting to 42g Magnum from 20, but I don't think the final product would benefit from more bitterness. IPA should be more about hop flavor and aroma than bitterness anyway.
I did cheat a bit on the color to fit style by choosing Daniels instead of the usual Morey. Could throw in a tiny bit of Special B which would add just enough color for style. |

Notes: Vanilla Beans, split and soaked in enough vodka to cover, for
2 weeks before bottling or kegging. Pour vanilla beans and
vodka through a strainer into the bottling bucket or keg.
Alternately, you can add the split vanilla beans directly to
the fermenter 4 days before bottling or kegging.
Brewer’s Notes: This recipe is from Jeremy Railey, who won first place at the
Indiana Brewer’s Cup in the Specialty category with this beer! Jeremy prefers
to zest the skin of an orange or two and freeze it overnight before brew day.
When he brews this beer, he will zest the skin of another orange directly into
the boil at 30 minutes left in the boil, then split the orange open and drop it
directly in the wort for the rest of the boil. He will put the frozen zest in at the
end of the boil. We have included sweet orange peel as an alternative to this,
but if you would like, you can try to brew it his way! He also uses Mexican
vanilla beans, as they give a smooth vanilla cream character to the beer. He
will soak the split beans in enough vodka to cover them for 2 weeks prior to
bottling or kegging, then strain the beans from the vodka extract directly into
the keg or bottling bucket. This is a delicious beer with a lot of fun variables
that can be brewed again and again |

Notes: Denne IPA-en er ment som en IPA i tradisjonen til Sierra Nevada. Der vi bruker den rene, litt krydrede og nesten litt edle aromaen og smaken av Magnum sammen med den litt gressete og behagelige Hersbrucker for å gi denne IPA-en et spesielt, men godt bakteppe.
Den humlen som virkelig skinner i denne IPA-en er Citra. Denne gir intens fruktighet fra tropisk frukt som virkelig skinner sammen med bakgrunnshumlen i Torpedo Evolution.
Denne ølla inneholder ikke karamellmalt og er bitrere enn originalen, for å gi et tørrere preg og en mer In-Your-Face smaksopplevelse. En IPA vi kan anbefale til alle menn og kvinner med hår på brøstet.
Denne har ikke anna enn sjela til felles med ølla som har et navn som ligner, men gud hvor god den er. |
