Notes: Used wild yeast and dregs from various enjoyed wild sours and kept for 2 years feeding ever so often. Also had toasted oak cubes in the starter.
No sparge brew.
Just mash for 60 mins at 150
Raise to 170 and let sit for 10
Drain and boil 60 mins add hops at boil
Transfer to 3 gallon fermenter and ferment for 1 to 2 years.
Bottle with 3/4 teaspoon white sugar and let sit 3 - 12 months

Notes: Mash at 149°F (65°C) for 60 minutes or until conversion is complete. Add half of the water salt additions to the mash and the rest at sparge. Add the FWH hops during runoff, immediately after vorlauf, and allwo them to steep in the hot wort as the mash is sparged.
Boil for 60 minutes. Whirlpool for 40 minutes (from start to rest) following the hops schedule.
Pitch the yeast and ferment at 67°F (19°C) for 2–3 days, then allow the temperature to rise slowly to 73°F (23°C) by the end of fermentation to ensure full attenuation. When fermentation reaches 1.5–2° Plato from terminal gravity (1.020–1.022), add the first dry-hop addition. About 4 days later, add the second dry-hop addition for another 4 days. Package at 2.6 volumes of CO2 and consume fresh.
Dry hop
Part 1: 5 days after fermentation begins
Part 2: Allow the first round of hops to steep for 5 days. On the 5th day remove them (use a hop bag so you can easily remove them) from the fermenter and add the next batch.
Allow the 2nd round of dry hops to steep for 5 days. On the 5th day (15th day of fermentation) remove the hops from the fermenter and rack the finished beer into a keg or bottles. |

Notes: El Dorado, Amarillo and Galaxy combination apparently very good.
Scaling batch up. Typically do 3.9 gallons of mash water, but using ~2lbs more grain, so adding .2 more gallons to account for grain absorption. Shooting to do a 3 gallon batch so I'm not struggling to fill fermenter, so adding an addition .25 gallons on top for a total 4.35 gallons (16.5 L) of mash water, and a target 3.75 gallons for the boil (3.25 gallons post boil).
