1. M05/or CBC-1 yeast pitch rate at least 0,5g/L - don't worry about overpitching 1-2g/L, neither 10-times more yeast will ruin your mead
2. yeast nutrient 0,25-0,3g/L = 1,2g Vitamon cerevisiae (in case of M05 yeast) in 3 additions
3. first nutrient addition before pitching yeast
4. second nutrient addition after 24 hours
5. third nutrient addition after 48-72 hours
6. be careful of adding nutrient: shake patiently the carboy before to exhaust CO2, nutrient can do CO2 fountain; exhausting CO2 every day to day 5 improves yeast condition and work
7. reading after 7 days: SG 1.003, temperature 21°C
8. transfer your mead to sanitized carboy without sedimented yeast and wait for two days to confirm that fermentation stopped (eventualy add protassium sorbate 0,25g/L = 1,1g)
9. do cold crash for 2-3 days to clear your mead
10. bottle and let aging at least 3 weeks at room temperature or ideally few months at 10°C
fermentation length 7 days + 2 days for confirmation
flavor: dry and wine like forest elves' liquor

1. očkovací dávka kvasnic M05 nebo CBC-1 se při této hustotě doporučuje aspoň 0,5g/L - neboj se ale předávkování 1-2g/L, ani 10-násobek tvou medovinu nepoškodí
2. výživa kvasnic 0,25-0,3g/L = 1,2g Vitamon cerevisiae (v případě kvasnic M05) ve 3 dávkách

9. pak zchlaď na 2-3°C a ponech tak aspoň další dva dny, až se medovina vyčistí
10. nalahvuj medovinu a nech zrát aspoň 3 týdny v pokojové teplotě nebo ideálně pár měsíců v 10°C
délka fermentace 7 dní + 2 dny na potvrzení
chuť: suchá a vinná jako od likér od lesních elfů |

Notes: update 4/24 : brewed this last night. last minute i added oat malt, and boosted flaked oats. in retro i wish id stuck to the original plan. prob dont need flaked wheat and flaked oats. aye. also efficiency was way way down last night not sure if its because of something in the grain bill or i mismeasured some malt, or something in the mash...i did not take many mash readings. so. im having to add some DME and sugar in a day or two. smh

this is an NEIPA spin off of the original Get These Hands IPA. For this one we add vienna malt and caramel pils, everything else in malt bill was already setup for NEIPA. could use london ale yeast again but will probably switch and use the rva manchester. adding a ton more hops, get rid of the FWH / no 60 min addition, use total of 10oz over the last 15 mins and dry hop. should be crazy.

original Get These Hands IPA
kinda made up on brew night.
C5 hop is a combo of cascade centennial citra columbus and chinook. i had more on hand of cascade and centennial so i did 1.2 centennial and 1.3 cascade , 1oz everything else for a total of 6 oz used. calculated the weighted average of the AA, hopefully that checks out.
using reused london ale yeast from a previous batch amber lamps. the yeast was never taken out of the fermentor. (taking half of the yeast to use on a barleywine im also brewing tonight) |
