Notes: This is my own recipe that I came up with. Tastes amazing! The bitter taste at first complements the sweet hoppy taste that hazes leave in your mouth. Decided to name into New Western IPA. New from New England IPA and Western from West coast IPAs. As this beer has the bitterness and the crispiness of a West Coast IPA but also has the distinct sweetness and the haze of New England IPAs.
Used the wrong hop during dry hopping. Used Simcoe instead of Nelson. Will use Nelson in the next batch. |

Notes: Treat the mash water with 2.7 g of gypsum and 7.1 g calcium chloride. Mash using 15.8 qt (15 l) of water. Target saccharification rest for 45 minutes before vorlauf at 152°F (67°C). Sparge at 168°F (76°C) to reach boiling volume.
175–200 ppm chloride, 75–100 ppm sulfate, and 125–150 ppm calcium.
Ferment at 67°F (19°C). One day before final gravity is reached, add the 1st dry-hop addition. After VDK clean-up or racking to secondary, add the 2nd dry-hop addition.
Cold condition 3 days after the 2nd dry-hop addition and package. |

| Notes: Single step infusion mash in 18 qts. (17 L) water at 149 °F (65 °C) for 60 minutes, then 169 °F (76 °C) for 10 minutes. Boil for 90 minutes, adding hops at indicated time. Cool, aerate and add yeast. Ferment at 79 °F (26 °C) for 7 days. Rack to keg with gelatine fining. Carbonate to 4 volumes, lager for 4 weeks at 39 °F (4 °C). Bottle from keg. |

Notes: Stocked up too many leftovers in my freezer, rather than throw them away, I thought I'd make a possibly stale and mostly like "meh" IPA.
Leftovers to be consumed:
- 250g Crystal C15
- 50g Vic Secret
- 30g Cascade
- 25g CTZ
Acidulated was to adjust pH to ~5.35 (predicted, didn't measure)
**Taste tests**
After 3 weeks, I can't decide if its too bitter, too grassy, or just not malty enough. Probably a bit of all three. Want to dial back the sulfate stuff next time, this was first try at that. Would like a bit malty taste next time too. |
