Notes: Toast 1/2 pound of flaked oats at 300 degrees for 15 minutes.
Toast fenugreek for a few minutes, until browned and fragrant, then crush or use coffee grinder before adding to boil.
After 3 weeks fermentation (or FG reached) transfer to 15 gallon maple rye barrel and 5 gallon glass carboy. One week prior to transfer (week 2 of fermentation) add rye whiskey to barrel and turn 1/4 turn each day. |

Notes: Mash at 155°F (68°C) for 60 minutes. Lauter, sparge, and collect wort. Boil 60 minutes, adding hops as indicated. Cool to 67°F (19°C). Ferment at 67°F (19°C) until specific gravity stabilizes at or near 1.018 (4.6°P). After fermentation, cold crash if possible and then rack beer off yeast and onto coffee in a CO2-purged secondary vessel. Let beer sit on coffee for 48 hours, cold if possible, and then rack off the coffee and bottle or keg.
