Notes: Basically shooting for a session beer somewhere between an American Light Lager, Cream Ale, and American Wheat. Figure with the beta glucans you get from the rye (or could use wheat, too, for something similar), it can take 50% flaked corn and not thin out too much. If want to be closer to light lager, can drop the Idaho 7 hops and just go noble, but I want a bit of fruit and citrus with the floral and spice from the Tettnang and Crystal. |

Notes: Too much roasted. Tasted a bit bitter/astringent before carb in the keg, though that mellowed out over a few weeks. Head wasn’t quite creamy, a little darker khaki colored. Throttling back the roasted barley a bit should help with both flaws and make this better. |

Notes: Mash normally. After mash out, boil for 5 minutes to sterilize the mash. Lower the pH to 4.5 (with lactic acid) to avoid some unwanted by-products that lactobacillus can generate.
Then cool to 47 degrees Celsius for lactic fermentation, and maintain this temperature until the pH reaches 3.4, protecting the wort from oxygen using co2 and a way to isolate it from the external atmosphere.
Then continue with the second boil, where the hops should be added.
For those who don't have the lactobacillus culture, you can also use 0,5kg of some unground malt (pilsen is the most used), which the lactobacillus in the bark will do the job.
For those who don't have a co2 cilinder and an advanced equipment, you can use a plastic film to seal the equipment, and use a previously purchased carbonated water (500ml) to be poured into the wort before sealing, that CO2 protection will be done. If you will do that tecnique with the carbonated water, add this amount of water for total water calculation. |

Notes: Directions
Mash all grains at 156F for 1 hour and draw first runnings to kettle. Some amount of caramelization is desired in this beer.
To achieve this, take a two pints of the first mash runnings and simmer in a saucepan to reduce to a syrup, taking care to
not burn it. Do this while the rest of the wort is boiling. Sparge grains with 175F water to collect the full volume of wort.
Boil wort for 90 minutes, begin adding hops with 60 minutes left to go according to the schedule above and add the wort
reduction back to the kettle with about 5 minutes left to go in the boil. Chill to 58F and pitch yeast
Fermentation
Ferment on the cooler side of the yeast's optimal range, roughly 58F. The beer takes a while to mature,
so give it close to 6 weeks of time in the fermenter before kegging or bottling. |
