White Labs WLP001 (California Ale), Wyeast 1056 (American Ale), or Fermentis Safale US-05 yeast
Mash the grains at 150–152°F (66–67°C).
Hold this temperature for 60 minutes.
Mash out, vourlaf, and sparge.
Boil the wort for 90 minutes, adding hops at the time indicated in the ingredients list. Chill the wort and pitch the yeast.
Ferment at 68°F (20°C). Dry hop 2 weeks after primary fermentation slows for 5 days.
Bottle or keg as usual. |

Notes: had a higher mash PH 5.5 at 20 minutes in. added 2ml latic acid which effectively did nothing. ended same 5.5. Needed 50ml Phosphoric acid to get pre boil wort down to 5.1. Next time add more acidulated malt and/or adjust with a greater amount of latic acid during mash. 1.07 pre boil gravity. Achieved 1.082 OG and a 5.1PH going into fermenter. |

OG 1.089 (1.064 initial reading + 16 points for cane sugar + 5 points for honey + 4 points for plums)
Added table sugar 18 Nov (Gravity reading was 1.046 this day)
With fermentation slowing down, added honey and 2 pkgs Premier Blanc dry yeast on 19 Nov
Raised temp to 76 on 21 November (didn't mean to go that high!), lowered temp back to 72 on 22 November
Added plums (frozen and pureed) 22 November
Gravity reading on 11/25 was 1.025
Racked off plums on 29 November (gravity reading 1.012)
Final gravity 9 December 1.011
Kegged 9 December, remaining volume bottle conditioned in two magnums, with 1 T honey each for carbonation
