Notes: Single infusion mash at 148-150°F (64-66°C) for 60 minutes. Note: Mash will likely stick without the generous addition of a lautering aid like rice hulls.
Ferment at 60-65°C (16-19°C) for 14 days. After fermentation is complete, roast the five poblano peppers and one habanero until the skins are charred black, then peel, seed and stem them. Put into a low heat oven (200°F) for 20 minutes. Add to fermenter. Package beer after another five days. |

Notes: Grain bill based on a popular local beer put out by one of Chicago's favorite breweries - Old Irving Brewing's "Beezer". This is a terrific beer that has great hop flavors, rich golden tone, and a nice IBU that finishes with a bit of kick.
I am deviating from "Beezer" in my hop bill and schedule, focusing on more hop forward flavor and aroma, and adding only a small amount of Citra to the boil for initial bittering. The original "Beezer" does not have Amarillo or Galaxy hops, but these are additions that I wanted to include in order to deviate and avoid copying. The ABV, IBU, and SRMs of the original recipe were goals of this recipe, however, the IBU was intentionally lowered to be more accessible for sharing this brew.
The water profile is based upon what is generally accepted as an appropriate water profile for a NEIPA, which I have decided upon for the desired mouthfeel and taste.
This will be my first batch, and results will be added to the brew sheet once completed. This exercise is meant to be a baseline for my future NEIPA brews. |

12/14: Kegged, even accounting for a separate packaging of 1.5L the remaining amount was disappointing, next time moar! 2.5bar for 21 hours, good carbonation again, good chocolate flavor, little to no cinnamon or pepper flavor, but all in all a clean taste.
