Notes: Get mash up to 165. Add the grains. Stir every 10 minutes and keep at 152.
Mash out at 170.
Vorlauf 10-20 minutes.
Batch sparge with 170 water.
Boil for 60 minutes.
Cool to 70 with wort chiller. Use chest freezer to get temp to 50.
Get OG reading.
Pitch yeast at 50.
Let ferment for 7 days.
Tools to gather for this: 8 gallon kettle with spigot, 4 qt stockpot for sparge, 8 qt for batch sparge/boil, pitcher for vorlauf, need sanitizing bucket, two 1 gallon carboys, two airlocks and two rubber stoppers |

This was half a split brew. I brewed 2 different yeasts. This one came out at 8.5 and was the nicer of the 2 brews, so I added wood chips. They were JD chips that had been soaking in a combination of my home made coffee liqueur and famous Grouse for 2 years. I kegged the beer into a 10ltr and put the wood chips into a hop tube and left them in there for 2 weeks.

Notes: A Scottish Pale Ale from the William Younger brewery
recipe calls for 57 IBU in one 2 oz, and two 1 oz. hop additions; after receiving hop pellets with higher bitterness, I shifted the sizes to 1.25 oz, 0.5 oz., and 2 oz. this is part of my "big hops later" strategy to emphasize hop aroma while maintaining balanced beers.
recipe called for White Labs WLP028 Edinburgh Scottish Ale Yeast, Farmhouse was out of that one and called to ask if it was okay to substitute Wyeast 1728 Scottish Ale yeast
1728 fermentation temp range is from 55-75 degrees
based on William Younger brewing records from 1848, I need to shoot for these fermentation temperatures:
day 1 - 59° F
day 2 - 61° F
day 3 - 63° F
day 4 - 66° F
pre-boil gravity - 1.042
O.G. - 1.053
I pitched at 63° F, and kept the beer between 56 and 62° F for the next three days.
Racked on Saturday 12/1. Yeast had settled to the bottom.
Bottled on Saturday 12/8.

II. YEAST- 1.5 L. Starter--24 Hours
III. LAGERING THE BREW:
1. PITCHING: Pitch yeast at 62 F. just until you see first sign of fermentation.
2. INITIAL FERMENTATION: Lower temp to 45 F. for two weeks
3. DIACETYL REST: Now raise temp. to 62 degrees for 3 days.
4. LAGERING;
A. Rack into carboy cooling 5 Degrees per day until you are down to 40 F. Wait 6 weeks.
B. Cool down to 33-35 F. for 3 days.
Condition Bottles: Condition bottles at the same temp as primary fermentation at for about 14-21 days. Raise the temp on them to that 62 degree range for about 2-3 days and then end up lowering the temp down to 33-35 degrees for a few weeks as well. This is because, the fermentation that occurs in the bottles with the corn sugar will end up leaving a hint of Diacetyl flavor again. So you rest them and lager it again. It produces a pretty clear/crisp lager.
