Notes: Recirculate during boil to reduce darkening of wort. Fermentation start at 60F, ramp to 70F over 4 days, let run till no airlock activity. Aluminum foil cover on carboy, preventing back-pressure during primary, then airlock for finishing. Finish ferment, rack/lager 4 weeks before serving.
Notes: Took ~36 hours to start fermenting@62F. Ran at 62-64F 3 days, ramped to 68 in 2 days. Fast fermentation once it gets going. Smells great...some hops and fruit esters. Day 10 dry-hopped & yeast started again, still fermenting 7-11 & gravity is 1.009. No acidic or infection flavors noted, hops becoming more noticeable, where they were lost in residual sugars. *Chilling 7-13. |

Malt forward, sweet but not overwhelming, good bready, balanced bitterness, lightly floral hops (can't smell well right now), medium mouth feel. Spot on for what I was trying to brew: a malty pale ale with a nice floral hop touch. |
