| Notes: Used 2nd generation WL840 from previous batch of American Lager. Excellent beer, reminisient of a German Pils with a lot more more body, or maybe an over-bitter Dortmunder. Hops aromatics/bitterness spot on for the style. In a judging scenario, it would probably score better as a Pre-Pro if the carafoam was increased and temp rests evened out between 148* and 160* to increase body. Maybe 45 mins each. |

Notes: La bière a infusé presque 120 minutes.....le goût de l'enveloppe du grain est très présent (âcre).
Taux mesuré de sucre: 1,060 ou 6,5 % ABV
3 décembre 18: transfert en tourie. Il y avait environ 3/4 de po de levures mortes dans le fond de la tourie, toutefois le transfert s'est bien déroulé (pas de perte).
La tourie est pleine à 95% (environ 3-4 pouces en bas du goulot).
Le moût (tourie) dégage de bonnes odeurs de fruits tropicaux (ananas, bananes). La robe est brune «Tan» et le goût est parfaitement équilibré. -J'y ai ajouté 2 gouttes d'extrait d'anis et 10 g de houblon Perle fraîchement décapsulé. Le goût âcre du début s'est dissipé. Le résultat s'annonce prometteur.
10 décembre-Embouteillage: 18 1/2 litres d'excellentes bière très équilibrée, avec un très léger gout de tanin (l'infusion a durée accidentellement 1h45 et le goût de l'enveloppe du grain s'est transféré au moût).
J'ai ajouté 150 g de dextrose pour la refermentation en bouteille.
J'estime avoir perdu un peu moins de 1litre de bière pendant l'embouteillage. Je pense que le taux d'alcool de la bière se situe autour de 6% (à l'oeil).
19 décembre: fin de refermentation en bouteilles.
Le goût d'anis n'est pas décelable. La bière a un nez tout en finesse et en subtilité (très légèrement floral) et le goût est très équilibré et rappelle un peu un Cream Ale.
