Notes: Put the dried hibiscus into a stockpot. Add 1 ½ gallon of water and bring to a boil. As soon as it boils, cut the heat and let the hibiscus steep for 30 minutes to extract as much tannic herbal quality without losing its bitter flavors.
While waiting for the steep, blend the honey and two gallons of water into the fermentation bucket to create the must.
Add the mixed berries and stir thoroughly.
Add the pectic enzyme. It will further help to break down the fruits and get better extraction out of the fruits. This step is optional, and you can skip it if you like.
Add the hibiscus tea to the must. Make sure to drain and discard the flowers for easy racking.

Top up with the remaining water and stir vigorously.
Pitch the yeast and mix.
Ferment the mixture semi-open by putting a sanitized paper towel over the bung and covering it with an upturned mug in place of an airlock. Leave it for two to three weeks to ferment. Be sure to punch the cap every 24 to 48 hours.
After three weeks, rack the mixture into a carboy.
Stabilize the mead by crushing five Campden tablets and potassium sorbate (follow the package instructions for the right amount) using mortar and pestle. Put the crushed chemical stabilizers into the carboy and let them sit for about a week.
Back sweet the mead by mixing one cup of boiling water and ½ cup of honey. Stir well until the mixture becomes homogeneous, then put it into the bottom of the bottling bucket.
Rack the Viking blod mead into the bottling bucket.
Bottle the mead and let it age for about six to eight months. |

Notes: Mash at 153°F (67°C) for 60 minutes, then rest until conversion is complete. Boil for 120 minutes. Pitch the yeast and ferment at 64°F (18°C) to start, allowing the temperature to rise to 67°F (19°C) near the end of fermentation to ensure full attenuation.
After fermentation is complete, in separate mesh bags, add to the fermentor 8 oz (227 g) of roasted cacao nibs and one vanilla bean split lengthwise. Leave the cacao nibs in contact with the beer for 1–3 days, tasting daily and removing cacao nibs when desired flavor profile is achieved. Condition for 2–3 weeks while aging with the vanilla bean, before packaging at 2.3 volumes. |

think this is too little for American market. less sensitive to hops presence due to Philly Sour being hop friendly. Boil for 90 for pils malt DMS reduction. Belle Saison is being copitched to produce a more farmhouse flavour and diastaticus action, as well as allow β-glucosidase enzyme to transform high survivable levels from centennial mash hops to have a high monoterpene alcohol production (gerianol, linalool) with the end effect of highlighting a floral light citrus tone. End result should be a low alcohol slightly soured dry ale that is a base for adding fruits and spices to taste. 10g CaCl2, 5g CaSO4, 24g Lactic 88%. |

Notes: Classic, historical Edinburgh Breakfast Beer - a very light, unhopped Scottish Ale that was meant for daily drinking in place of other sanitation methods for water.
In Edinburgh, ales were traditionally unhopped, with beer being distinguished by being bittered, initially with herbs and later rather reluctantly with hops. Edinburgh continued the use of bittering herbs much longer than the rest of Europe, out of the belief that hops caused erectile dysfunction or "brewer's droop" - and Edinburgh was one of the last places where brewing was completely controlled by women.
There are multiple references from the mid-18th century onwards to having beer or ale at breakfast, and a casual modern reader might assume that all of Edinburgh was wandering around in a drunken haze. In fact, it would have been a breakfast ale, brewed specifically for the purpose, and perhaps lighter even than this 2.8% ABV ale.
In this particular brewing session, we used a perforated plate system to achieve an approximation of fly sparging during the lautering and got a pretty astonishing 90% efficiency out of the kettle. I will be using this method again. The refractometer read 1.027 SG, the hydrometer 1.031. I used the average of the two.
Since there are no hops, the purpose of the boil was to sanitise the wort and get some of the proteins to coagulate, hence it's only a minute long. In practice, this was ten minutes while we faffed around with our counterflow chiller. This batch was the inaugural outing for said chiller, and it took us a bit of time to figure it out.
I added six grams of Saccromyces to the boil and oxygenated for a minute with pure oxygen after we had achieved 18 ºC. It's in the fermenter now and I'll have tasting notes in a few weeks. |
